1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

Wow, this is a moist and delicious coffee cake. We all loved it! Part of the topping is swirled and mixed into the batter which carries all the brown sugar goodness throughout the cake. The maple glaze is so tasty. We opted to add macadamia nuts along with pecans to the topping which added a nice a crunch to the cake. Oh, and it smells just wonderful while cooking, kind of like cinnamon rolls.

CAKE MIX INSTRUCTIONS
1 box(es) yellow cake mix, I use Betty Crocker with a pudding mix
3 - eggs
1 cup(s) water
1/3 cup(s) butter
TOPPING
3/4 cup(s) brown sugar
1 teaspoon(s) cinnamon
1/2 cup(s) pecans
1/4 cup(s) flaxseed or another nut, as desired
THE DRIZZLE
1 cup(s) powdered sugar
dash(es) maple extract
- milk or whipping cream, as needed

Steps:

  • Spray bottom of 9 x 13 pan.
  • Combine the cake ingredients as directed on the box.
  • Combine topping ingredients.
  • Pour batter into the baking dish. Sprinkle 1/2 of topping and swirl in cake.
  • Sprinkle the remaining topping on top of the cake.
  • Bake at 350 until a toothpick comes out clean about 30-35 min or according to cake instructions. Let cool.
  • Mix together the powdered sugar, maple extract, and milk until a glaze forms.
  • Drizzle the glaze over the cooled cake.

In a separate bowl, whisk together the buttermilk and yogurt until smooth. Turn the mixer on low and alternate, adding some of the flour mixture with some of the sour cream mixture. When all has been mixed, give the sides and the bottom of the bowl a scrape and blend to make sure the batter is thoroughly integrated. Transfer the batter to the greased baking pan, spreading it out evenly. Liberally sprinkle the cake with all of the topping. Take care to cover the whole top. Put the pan in the center of the oven and bake until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Remove the cake from the oven and allow to cool for 30 minutes before serving.
