1/3 c Margarine or butter, melted
3 Eggs
1 tb Baking Powder
2 ts Vanilla
2 c Flour
1 c Sugar
1/4 c Unsweetened cocoa powder

Steps:

  • "Stir together flour, cocoa powder, baking powder, and cinnamon. Beat eggs in small mixer bowl with mixer on high speed 4 minutes or until thick and lemon colored. Gradually beat in sugar on medium speed. Beat in margarine and vanilla. Add flour mixture; beat on low speed until combined. Heat pizzelle iron according to manufactures directions. Place a slightly rounded tablespoon of batter slightly off-center toward the back of grid. Bake according to manufacturers directions. Turn wafer out onto to paper towel to cool. A spicy pizzelle cookie for using with a pizzelle iron.

9 eggs
2?½ cups white sugar
4 teaspoons ground cinnamon
3 tablespoons baking powder
1?½ cups unsalted margarine
5 cups all-purpose flour

Steps:

  • In a large bowl, beat eggs, margarine and sugar together. Stir in the flour, baking powder, and cinnamon to form a sticky dough.
  • Preheat the pizzelle iron. Drop cookie dough by rounded teaspoonfuls onto the hot iron close the lid and cook for 1 to 2 minutes. Steam will stop coming out of the iron. Place cookies on a wire rack to cool.
