New to making pot roasts? 15 minutes of prep is all that’s required for this easy, no-fuss slow cooker-dish. Prep the chuck roast in the morning and let it cook all day so the meat will be tender, juicy, and ready to eat when you come home from work. Serve the simple gravy over the roast and carrots. Pro tip: Add potatoes into the slow cooker 1 hour before dish is ready or serve over garlicky mashed potatoes.

1 (3 1/4- to 3 3/4-lb.) chuck roast, trimmed
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
1 (1-lb.) package baby carrots
1 (14.5-oz.) can petite diced tomatoes
1 cup chopped celery
1 cup beef broth
½ cup dry red wine
4 garlic cloves, chopped
½ teaspoon dried thyme leaves
¼ teaspoon dried marjoram

Steps:

  • Rub roasts evenly with 1 tsp. salt and 1 tsp. pepper.
  • Brown roasts on all sides in hot oil in a Dutch oven over medium-high heat (about 10 minutes). Place roasts, side by side, in a 6-qt. slow cooker. Add carrots and remaining ingredients.
  • Cook, covered, on LOW 10 to 12 hours or until tender. Remove roast and vegetables, and shred meat. Pour gravy mixture from slow cooker into a 4-cup measuring cup or fat strainer, and let stand 15 minutes. Spoon or pour fat out of gravy mixture in cup or fat strainer, and discard. Serve gravy with shredded roast and carrots.

1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 tablespoon Montreal steak seasoning
1 (3 pound) chuck roast, or more to taste
½ cup barbeque sauce
¼ cup brown sugar

Steps:

  • Preheat a smoker to 275 degrees F (135 degrees C).
  • Combine salt, pepper, garlic powder, and steak seasoning in a bowl. Rub mixture evenly over the roast and place in a baking pan.
  • Cook roast in the smoker until meat reaches an internal temperature of 165 degrees F (74 degrees C), 4 to 4 1/2 hours. Wrap roast in aluminum foil and continue smoking until meat reaches an internal temperature of 195 degrees F (90 degrees C), about 1 hour more.
  • Remove roast from smoker and let sit for 20 minutes. Leave smoker on.
  • Cut meat into cubes and return to the baking dish. Add barbeque sauce and brown sugar.
  • Smoke meat for 1 1/2 to 2 hours more.
