It just would not be any holiday in our house without this jello salad. My mother-in-law was the one who started this tradition many years ago, and now has passed her recipe on to me. This rich jello salad has a beautiful presentation with the cherry and lemon jello. To cut a few of the calories from this salad, I use the 1/3 less fat cream cheese and sugar free jello.

Ingredients

1 (3 ounce) package lemon Jell-O gelatin
1 1/2 cups water
16 large marshmallows
1 (8 ounce) package cream cheese, cut into smaller pieces
1 cup mayonnaise
1 (20 ounce) can crushed pineapple, drained
8 ounces whipping cream
1 (3 ounce) package cherry Jell-O
1 1/2 cups water

Steps:

In a medium-size pan, bring 1 1/2 cups water to a boil and stir in lemon jello until dissolved. Reduce heat to low and add the marshmallows, cream cheese, and mayonnaise. Stir or whisk until all the ingredients are completely dissolved. Turn the heat off.
In the same pan, add the drained pineapple and mix well. Set aside.
In a small chilled bowl, mix the whipping cream until soft peaks are formed. Fold into the jello mixture.
Pour into a 9x13 glass dish and refrigerate until set.
Topping:.
Mix cherry jello into 1 1/2 cups of boiling water and stir until dissolved. Let cool to room temperature.
Once the lemon mixture has set, pour the room temperature cherry jello slowly on the the top and refrigerate until set.

I got this recipe from a friend Lynn when we hosted a BBQ for our families (we shared an apartment a few years after college). My family loved this recipe. It's perfect for summer and eating outside, but wait to bring it out into the heat until you are ready to eat.

Ingredients

1 1/2 cups thin pretzels, crushed (crush them before you measure)
3 tablespoons sugar
1/2 cup butter, melted
8 ounces light cream cheese
12 ounces Cool Whip (light or fat free is fine)
3/4 cup sugar
2 cups boiling water
1/2 cup cold water
6 ounces strawberry Jell-O gelatin dessert
20 ounces strawberries, sliced (fresh or frozen, I used closer to 10 oz)

Steps:

Preheat oven to 350 degrees.
Place pretzels in ziplock bag and crush into small pieces using rolling pin. Measure pretzels after crushing.
Mix together pretzels, 3 tbsp sugar, and butter.
Pat pretzel mixture into a 9 x 11 pan and bake for 10 minutes.
When the crust is cool, mix cream cheese, 3/4 cup sugar and Cool Whip together and spread on crust.
Bring 2 cups water to a boil and stir in strawberry Jello. Add cold water and mix well.
Add strawberries.
Let mixture set until slightly thickened, then pour over cream cheese mixture.
Refrigerate until jello is firm.
