You can make this Panda Express menu favorite at home in less time than it’d take you to load in the car and hit the drive thru. Even better, you can customize our copycat chow mein easily by adding in any favorite veggies you have on hand. If you want to bulk this easy noodle dish into an entree, add your protein of choice—leftover chicken, shrimp, or a freshly fried egg would all make great additions (and they won’t cost extra).

Yield Serves 4 (serving size: about 1 cup)

Number Of Ingredients 10

3 tablespoons canola oil
1 tablespoon sesame oil
½ medium-size white onion, finely chopped
2 celery stalks, sliced
1 tablespoon chopped fresh ginger
3 cups shredded coleslaw mix
5 ounces bean sprouts
1 (7.1-oz.) pkg. pre-cooked stir-fry noodles
¼ cup tamari
2 tablespoons mirin or white wine

Steps:

  • Heat oil in a wok over high. Add onion, celery, and ginger; cook, stirring often, 1 minute. Add coleslaw mix and sprouts; cook, stirring constantly, 2 minutes. Add noodles, and cook, stirring constantly, 1 minute. Add tamari and mirin; cook, stirring occasionally, 2 minutes.

This meant that I could watch from the sidelines as they whipped up a fresh batch in a giant wok over a high flame in the completely visible kitchen, and I was able to take plenty of mental notes. The whole dish took just a few minutes for the enthusiastic chef to prepare, and before I knew it I was out the door with a huge box of hot chow mein ready for hacking.  Just like the real dish, the beauty in this re-creation is its simplicity. There are only seven ingredients, and the prep work is low-impact. I used dry chow mein noodles (also called Chinese stir fry noodles) which are easy to find and cheap, and dark soy sauce to get that great caramel color. And if you don’t have a wok for this, a large skillet with sloped sides for tossing will work just fine.
