2 sq. unsweetened baking chocolate
2 c. light corn syrup
2 T butter
Healthy pinch of salt
1 teaspoon vanilla

Steps:

  • Cook the chocolate and syrup till a small amount dripped from a spoon forms a thread into a cup of cold water and cracks when tested between fingers. Remove from burner and add in butter, salt and vanilla. Spread on one or possibly more buttered plates or possibly platter.When cool sufficient to handle, pull vigorously for several min till it is a lighter brown and becomes too stiff to continue to pull. Form into a rope-like shape on a large bread board or possibly similar surface and using kitchen shears, snip into convenient size pcs (approximately 1 inch).

4 ounces unsweetened chocolate
1 tablespoon butter
2 cups sugar
1 cup light corn syrup
1 cup water
1 1/2 teaspoons salt
1/2 teaspoon peppermint extract or 3 -5 drops peppermint oil

Steps:

  • Melt chocolate and butter in top of double boiler.
  • Mix rest of ingredients, except extract, in large heavy bottomed pot and cook over high heat, stirring constantly, until sugar is dissolved.
  • Lower heat and continue cooking without stirring to 262º (hard-ball stage).
  • Remove from heat, add chocolate and butter, stirring only enough to blend.
  • Pour into a shallow greased pan. Put flavoring in center of the mass and work carefully into the mixture. When cool enough to handle, remove from pan, divide into pieces, and pull until somewhat lighter in color.
  • When cold, cut into bite-sized pieces.
  • Wrap in waxed paper or candy wrappers.

  • Line a baking sheet with parchment paper. In a saucepan over medium heat, combine butter, sugar, vanilla, and salt. Let butter melt and sugar dissolve and bring to a boil, then cook, stirring constantly with a whisk, so the butter and sugar don't separate, until mixture turns a dark amber and is thick, 12 to 15 minutes. (If you'd like to use a candy thermometer for this step, attach it to the saucepan and cook until the temperature reaches 285º.) Pour toffee mixture onto a prepared baking sheet and immediately top all over with chocolate chips. Let sit 2 minutes so chocolate begins to melt, then spread chocolate all over with a spatula to create a layer on top of toffee. Sprinkle all over with almonds and pecans (use chopped crumbs too for nice texture!) and flaky sea salt. Refrigerate until set, about 1 hour, then cut or break into pieces and serve.
