1 pound chicken legs or thighs
Water, to cover
2 ¼-inch slice of ginger
1 cup Shaoxing wine
1 cup drinking water
2 tablespoons sugar
3 tablespoons light soy sauce
1 tablespoon oyster sauce

Steps:

  • In a pot, add the chicken and enough water to cover the chicken by one inch. Then add ginger and turn the heat up to high. When the water boils, turn the heat to low, and simmer for 15 to 20 minutes, until the internal temperature of the chicken registers 165 F.
  • Take the chicken out to cool.
  • Meanwhile, make your marinade by combining wine, drinking water, sugar, light soy sauce and oyster sauce. Mix thoroughly.
  • In a tupperware or a pot with a lid, put in the cooked chicken and cover with the marinade. Place this in the refrigerator for a minimum of 2 days and up to 5 days before eating.

Yield 5 pounds chicken wings

Number Of Ingredients 4

2 cups soy sauce
2 cups brown sugar
2 tablespoons garlic powder
5 pounds chicken wings, split and tips discarded

Steps:

  • Stir the soy sauce, brown sugar, and garlic powder together in a saucepan over medium heat; cook and stir until the sugar melts completely. Remove from heat and allow to cool.
  • Place the chicken wings in a large bowl. Pour the soy sauce mixture over the wings and toss to coat evenly. Cover the bowl with plastic wrap. Allow chicken to marinate in refrigerator overnight or 8 hours.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Pour the chicken wings and marinade into a 9x13-inch baking dish. Cover the baking dish with aluminum foil.
  • Bake in the preheated oven until thoroughly hot, about 45 minutes. Remove the aluminum foil from the baking dish and continue baking uncovered another 15 minutes. Serve hot.

  • To Prep Wash the chicken and pat dry with paper towels, then cut into bite-sized pieces. Mix the chicken with the all the marinade ingredients in a mixing bowl. Allow to marinate for at least 30 minutes. To Cook Heat up 2 tbsp of vegetable oil in a wok over medium high heat. When the oil is hot enough, add the garlic and ginger and stir fry until fragrant. Add the chicken and cook until they brown. Mix in the water, soy sauce, rock sugar and Shaoxing wine. Cover the wok and let the chicken cook until they are done (15-20 minutes). Check if the sauce has reached your desired consistency; otherwise allow the sauce to reduce further. Stir in the spring onions and goji berries and remove from the heat. Transfer to a serving bowl and serve with some cooked white rice. You can stir in some more wine if you’d like a stronger wine aroma.
