2 medium potatoes, peeled,thinly sliced
1/2 teaspoon salt
1 tablespoon vegetable oil
8 shiitake mushrooms, stemmed and caps sliced
1 green onion, minced
1 teaspoon finely chopped gingerroot
1/2 tablespoon white wine
1/2 tablespoon oyster sauce
1/2 tablespoon soy sauce
1/2 tablespoon sugar

Steps:

  • Cover potatoes with water and salt in a medium saucepan; heat to a boil; cook 1 minute; drain.
  • Transfer to a bowl filled with cold water and ice; cool completely, drain on paper towel; pat dry.
  • Heat a wok over high heat; add vegetable oil.
  • Stir-fry potatoes in oil until tender, about 4 minutes; add mushrooms, green onion, ginger, wine, oyster sauce, soy sauce and sugar.
  • Cook, stirring, until all liquid is absorbed, about 3 minutes.

Is there anyone like me who eats potatoes every day?

New potatoes are currently on the market in large numbers. How do you like to eat them best? Fried potato shreds or French fries?

Today, I will introduce to you a less common way to eat potatoes. Although rare, they are very delicious. As far as I know, it has two very special names, potato rubbing and stir-fried scallops. These two names refer to the same dish. To be honest, potatoes are often eaten, but it is a recent thing to know that it is also called yam, but I don’t like this name too much. Therefore, for the name of this recipe, I adopted another name: stir-fried scallops. .

I once ate this delicacy in a restaurant during a business trip to a certain western city last year. I still remember being surprised at the taste, but I couldn't guess what it was. I asked the waiter and found out that it was made of potatoes. After returning home, I often remembered that taste and tried to copy it at home. Of course, it was a success. Now I will share it with everyone.

2 pcs potato
1 piece green pepper
1 piece Red pepper
Half bowl Flour
3 pcs Dried chili
2 petals garlic
1 tree shallot
2 scoops oil
Right amount salt

Steps:

  • A group photo of the main ingredients, of which red pepper and flour were not photographed
  • Peel and wash potatoes, use a shredder tool to wipe into silk, do not overwhelm the potato shreds after wiping
  • Sprinkle an appropriate amount of flour and mix well until the roots are distinct, so that each shredded potato is covered with flour
  • It takes about 10 minutes to be steamed in the pot
  • In the process of steaming potato shreds, change the side dish to a knife. Remove the stems, remove the seeds and shred the green and red peppers, dice garlic, slice green onions, soak the peppers in water and cut into sections
  • After the potatoes are steamed, take them out, pick them up with chopsticks, and let cool
  • Heat oil in a pan, add onion, garlic and chili and sauté until fragrant, medium and low heat, so as not to stir
  • Then add shredded green and red peppers
  • Add potato shreds, add salt, and stir well.
