1.667 cups Long grain rice (rinsed in several changes of water)
2 large eggs
1 tablespoon sesame oil
2 tablespoons Nut oil
2 scallions (finely chopped)
salt
freshly ground Black pepper

Steps:

  • Combine the rice with 600 ml of slightly salted water in a large saucepan. Cook over a moderate heat until boiling.
  • Cover and cook over a very low heat for about 25 minutes, until the water has been absorbed. Remove from the heat and leave to cool, covered, to one side.
  • Lightly whisk the eggs with the sesame oil and a little salt.
  • Heat the groundnut oil in a wok and stir-fry the cold rice for 3 minutes.
  • Add the beaten eggs and stir-fry for a further 2-3 minutes.
  • Season with salt and pepper, add the spring onions, and stir-fry for a further 2 minutes. Serve in small bowls.

1/4 cup rice vinegar
1 green onion, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon toasted sesame seeds
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon minced fresh gingerroot
1 package (8.8 ounces) ready-to-serve brown rice
4 cups coleslaw mix (about 9 ounces)
2 cups shredded rotisserie chicken, chilled
2 cups frozen shelled edamame, thawed

Steps:

  • For dressing, whisk together first 7 ingredients. Cook rice according to package directions. Divide among 4 bowls., In a large bowl, toss coleslaw mix and chicken with half of the dressing. Serve edamame and slaw mixture over rice; drizzle with remaining dressing.
