Number Of Ingredients 13

3 tbsp. oil
1 c. diced chicken or possibly pork
1/2 teaspoon sugar
2 tbsp. soy sauce
3 1/2 tbsp. cornstarch
1 tbsp. sherry (optional)
1/2 c. diced onion
1/2 c. diced celery
1/2 c. mushrooms, sliced
1 (10 ounce.) pkg. frzn peas
1 can consomme
Salt and pepper to taste
Warm rice

Steps:

  • Coat chicken or possibly pork with sugar and soy sauce and brown in warm oil. Remove. Add in celery and onions to oil and brown fast so they are still crisp; remove. Brown mushrooms next. Mix vegetables with chicken or possibly pork and return all to the frying pan. Add in peas and consomme. Bring to a boil, stirring occasionally. Serve over rice. This is a good way to use up leftover chicken or possibly turkey!

Makes a tasty side dish with beef, pork or chicken. If you're allergic to sesame like I am, you can substitute the sesame oil with peanut oil and the sesame seeds with sunflower seeds.

1 tablespoon(s) vegetable oil
1 clove(s) garlic, minced
1 tablespoon(s) finely chopped peeled ginger
1/4 teaspoon(s) red pepper flakes
6 ounce(s) sugar snap peas, cut into 1-inch pieces
6 ounce(s) snow peas, cut into 1-inch pieces
1 cup(s) frozen green peas
1 1/4 teaspoon(s) soy sauce
1 teaspoon(s) sesame oil or peanut oil
1 tablespoon(s) toasted sesame seeds or sunflower seeds

Steps:

  • Heat vegetable oil over medium-high heat in a 12-in. skillet until hot, then stir fry ginger and red pepper flakes about 1 minute.
  • Add sugar snap peas and snow peas and stir fry until crisp-tender, about 3 minutes.
  • Add the frozen peas and stir fry until hot, about 2 minutes.
  • Remove from heat and stir in soy sauce and sesame (or peanut) oil.
  • Sprinkle with seeds and season with salt to taste.

  • Heat a wok or large, heavy nonstick skillet over medium-high heat until a drop of water evaporates upon contact. Add the remaining oil and swirl around the pan, then add the shrimp and cook about one minute, stirring and tossing with a spatula or wok scoop until just about cooked through and pink. Add the garlic and ginger, and stir-fry for 30 seconds. Add the sherry, and stir everything together. When the sizzling stops, pour in the remaining beaten egg. Stir-fry until scrambled, and add the rice. Cook the rice — scooping it up, then pressing it into the pan and scooping it up again — for about two minutes. Stir in white and lighter green parts of the scallions, the peas and the soy sauce. Stir together for about half a minute, and transfer to a warm serving platter. Sprinkle the egg strips, scallion greens and cilantro over the top. Serve hot.
