Number Of Ingredients 7

1 whole chicken breast, skinned and boned
1 teaspoon salt
1 tbsp. dry sherry
1 teaspoon cornstarch
3 tbsp. vegetable oil
10 ounce. fresh snow pea pods, trimmed and cut in 1" pcs
1/2 c. (about 8) water chestnut slices

Steps:

  • Slice chicken into pcs 1 x 1/2 x 1/4 inch. Mix chicken with 1/2 tsp. salt and sherry; stir in cornstarch. Set aside. Heat 1 Tbsp. of oil in wok. Stir fry the snow pea pods for 20 seconds, add in 1/2 tsp. salt and stir a few more times. Add in the water chestnut and stir fry for another 10 seconds and set the mix aside. Heat 2 Tbsp. of oil in wok. When warm, add in the chicken mix and stir quickly, separating the pcs. Keep stirring till all the chicken turns opaque. Return the snow pea and chestnut mix to the wok, mix a few times and serve with cooked rice.

Cooking spray
2 teaspoons vegetable oil, divided
¾ cup thinly sliced red bell pepper (about 1 medium)
¾ cup thinly sliced yellow bell pepper (about 1 medium)
6 ounces fresh snow pea pods
4 (6-ounce) skinless, boneless chicken breast halves, cut into thin strips
1 garlic clove, minced
1 cup low-sodium chicken broth
¼ cup low-sodium soy sauce
1 tablespoon plus 1 teaspoon cornstarch
3 tablespoons dry sherry
1 teaspoon grated peeled fresh ginger
¼ cup sesame seeds, toasted
3 cups hot cooked long-grain rice

Steps:

  • Coat a large nonstick skillet with cooking spray. Add 1 teaspoon oil; place over medium-high heat until hot. Add peppers; stir-fry 2 minutes. Add snow peas; stir-fry 2 minutes. Remove from pan; keep warm.
  • Add remaining oil to pan. Add chicken and garlic; stir-fry 4 minutes or until chicken is lightly browned. Remove from pan.
  • Combine broth and next 4 ingredients; stir well. Add chicken, broth mixture, and sesame seeds to pan; cook 3 minutes or until mixture is thickened and bubbly, stirring frequently. Stir in vegetable mixture. To serve, spoon 3/4 cup rice onto each plate; top evenly with chicken mixture.

  • Mix the soy sauce, sherry, brown sugar, cornstarch, and ginger in a small bowl. Pour about a third of the mixture over the chicken in a large bowl and toss with your hands; set aside. Reserve the remaining liquid. Heat the peanut oil in a large cast-iron skillet or wok over high heat. Add the snow peas and stir-fry for 45 seconds. Remove to a plate and set aside.
