Delicious and simple. Throw everything in the Crock Pot and let it go. Uses simple ingredients and tastes wonderful! I always make some pasta and pour it over.

2 boneless skinless chicken breasts, frozen
1 (14 1/2 ounce) can hunt's diced tomatoes with basil oregano and garlic
4 -6 white button mushrooms, diced in big chunks
1/2 cup diced green pepper
1 tablespoon sugar
1 teaspoon italian seasoning
1/2 teaspoon crushed red pepper flakes
salt and pepper

Steps:

  • Add everything to the Crock Pot (no need to thaw the chicken) and stir until well-blended.
  • Cook on low for 4-5 hours, stirring occasionally.
  • After about 4 hours, I usually fish the chicken out and shred it with a fork because it's easier to eat over pasta that way, and then I let it cook another hour or so.
  • Serve over pasta or rice for a tasty, simple meal.

  • Dust chicken with flour. Season with salt and pepper. In a large skillet, brown chicken on all sides in oil and butter over medium-high heat. Remove chicken to platter. , In the same skillet, cook and stir the onion, celery, pepper and mushrooms for 5 minutes. Stir in the tomatoes, tomato sauce, tomato paste, wine, herbs, garlic and sugar. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Return chicken to skillet. Cover and simmer for 45-60 minutes or until chicken is tender. Serve over pasta and sprinkle with Parmesan cheese.
    Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet, , stirring occasionally, until a thermometer inserted in chicken reads 165°.
