2 tablespoons active dry yeast
3 cups warm water (110° to 115°)
2 tablespoons sugar
2 teaspoons salt
6-1/2 to 7-1/2 cups bread flour
Optional: Cornmeal and sesame seeds

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, salt, yeast mixture and 3 cups flour; beat on medium speed 3 minutes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with a kitchen towel and let rise in a warm place until doubled, about 30 minutes., Preheat oven to 500°. Punch dough down. Divide and shape into 6 balls. Place 3 in. apart on 2 baking sheets that have been generously sprinkled with cornmeal or greased. Cover with a kitchen towel; let rise in a warm place until doubled, about 15 minutes. Spray loaves with water; if desired, generously sprinkle with sesame seeds. Using a sharp knife, score surface with shallow cuts in an "X" pattern. Bake 2 minutes. Reduce oven setting to 425°. Bake until golden brown and internal temperature reaches 190°-200°. Remove from pans to wire racks to cool completely., Cut a thin slice off the top of bread. Hollow out bottom portion of loaf, leaving a 1/2-in. shell. Discard removed bread or save for another use, such as croutons.

3 boneless skinless chicken breasts
3 bell peppers, any color, sliced
1 large red onion, sliced
2 tablespoons olive oil
1 tablespoon taco seasoning
salt and pepper
1 (10 ounce) jar salsa
3 cups cooked brown rice, divided
10 ounces black beans, drained and rinsed
1 (10 ounce) can corn
1 cup shredded cheddar cheese
1 lime, sliced into wedges
fresh cilantro (to garnish)

Steps:

  • 1. Preheat oven to 400˚F/200˚C.
  • 2. Line a baking sheet with foil.
  • 3. Place the chicken, peppers, and onions on the baking sheet and drizzle with oil.
  • 4. Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
  • 5. Salt and pepper the peppers and onions, tossing to coat.
  • 6. Top each chicken breast with a generous pour of salsa.
  • 7. Bake in a preheated oven for 25 minutes.
  • 8. Rest chicken for 10 minutes, before slicing into strips.
  • 9. Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked peppers and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
  • 10. Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.
  • 11. Meal-prep FTW! Enjoy!
