CHICKEN WITH GARLIC-TOMATO SAUCE RECIPE: HOW TO MAKE IT

- Sprinkle both sides of chicken with pepper. In a large nonstick skillet over medium-high heat, brown chicken on each side in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute tomatoes and garlic in remaining oil for 1 minute. Add carrots; saute 2-3 minutes longer. Combine the tomato sauce, broth, tomato paste and rosemary; stir into skillet. Bring to a boil. , Return chicken to the pan. Reduce heat; cover and simmer until a thermometer reaches 165° and carrots are crisp-tender, 10-12 minutes. Serve with pasta.

I work 12 hour shifts, so I'm always looking for recipes that are quick, easy, and low maintenance. I threw this together the other day with stuff I found in the fridge, and it turned out great! I like really spicy stuff, so I tend to use a lot of cayenne. Play with the ingredients to find your taste!! :)

Steps:
- place chicken breasts on bottom of pot.
- Add pasta sauce, spices, and vegetables to crock pot.
- Cook 8-10 hours in crock pot until chicken is fully cooked.
- Serve with parmesean or mozzarella cheese on top.
- This dish can also be frozen for a great tasting "TV Dinner". How easy is that? :).
