This recipe is a delicious and creamy dish with both shrimp and chicken. Serve with a loaf of crusty bread and a tossed green salad, if desired.

1 pound linguini pasta
¼ teaspoon ground nutmeg
1 pinch cayenne pepper
½ teaspoon onion powder
½ teaspoon ground black pepper
4 tablespoons butter
½ cup milk
1 cup heavy cream
2 tablespoons olive oil
2 cloves garlic, chopped
4 skinless, boneless chicken breast halves - cut into cubes
¾ cup white wine
1 pound medium shrimp - peeled and deveined

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a small bowl, combine nutmeg, cayenne pepper, onion powder and pepper; set aside.
  • In a medium saucepan over medium heat, melt butter and add 1/2 of the spice mixture, milk and cream. Heat until sauce thickens; set aside.
  • In a large skillet over medium heat, warm olive oil and add garlic, chicken, wine and remaining spice; cook until chicken is no longer pink. Remove chicken from pan and cook shrimp.
  • Deglaze pan by adding some wine and heating it for 2 to 3 minutes; add the cream sauce and reheat if needed. Pour sauce over hot linguine and add chicken mixture and shrimp.

500 grams Linguine
200 grams shrimp (peeled and deveined)
250 grams Chicken breasts (cut into bite-size pieces)
150 grams smoked Sausage (cut into small pieces)
7 tablespoons crushed tomatoes
150 milliliters Chicken broth
1 size onion (finely chopped)
3 garlic (finely chopped)
1 red Bell pepper (finely chopped)
2 stalks Celery (finely chopped)
2 bay leaves
1 tablespoon Pastry flour
freshly ground peppers
1 teaspoon dried oregano
salt
Tabasco sauce
olive oil

Steps:

  • Heat 4 tablespoons olive oil in a large pan. Add the onion and garlic and cook over medium heat until soft. Add the bell pepper, celery, chicken breast and smoked sausage and saute briefly. Sprinkle flour over and stir until all the flour has absorbed all the moisture. Stir in the chicken broth, crushed tomatoes and bay and simmer over low heat for 1-2 minutes. simmer. Remove the pan from the heat and stir in the oregano. Season with salt and plenty of pepper. Add the shrimp and let stand until cooked through (do not boil!).
  • Meanwhile, cook the pasta according to package directions until al dente. Toss with the sauce and 1 tablespoon Tabasco. Season with salt and pepper and serve immediately.

I have played around with how much cayenne pepper to put in this dish because the recipe I found originally just said "to taste". For me, one teaspoon is too mild, but two teaspoons is pretty spicy. I'd put some in and do a taste test before you add more. The original recipe was in Denver's Rocky Mountain News, but I have modified it to our tastes, including leaving out the green onion and increasing the amount of the sauce. Also, the original recipe said it served 4, but we have no problem getting 6-8 servings of this. I serve it with a tossed salad and my Recipe #281657.
