I love this crisp recipe - you can easily use other types of fruit and has adequate amounts of fruit and topping. The topping is usually about a half-inch thick, so add more fruit to a 9x13 pan if you like a larger amount of fruit in compairason to topping

4 cups sour pitted cherries (fresh or frozen)
1 1/2 cups sugar
4 tablespoons flour
1/4 teaspoon cinnamon
1 1/2 cups flour
1 cup quick-cooking oats
1 cup brown sugar
1/2 teaspoon cinnamon
1/2 cup butter, softened

Steps:

  • Preheat oven to 375.
  • In a 9x9 pan, combine cherries, 11/2 cups sugar, 4 T flour and 1/4 teaspoons cinnamon.
  • In a separate bowl combine, 1 1/2 cups flour, oats, brown sugar, remaining cinnamon. Cut in softened butter until all is moistened.
  • Cover cherries with topping.
  • Bake in oven for 45 minutes or until browned and bubbly.

sliced almonds 

1 c.

old-fashioned rolled oats 

1 c.

all-purpose flour

1/4 c.

brown sugar 

1/2 tsp.

kosher salt 

1/2 tsp.

ground cinnamon

1/3 c.

honey

10 tbsp.

cold unsalted butter, diced, plus more for the pan

1/3 c.

granulated sugar

2 tbsp.

cornstarch

6 c.

fresh pitted sweet cherries (or thawed frozen cherries)

1/2 tsp.

almond extract

1 tbsp.

lemon juice

Vanilla ice cream, for serving

Steps:

  • Preheat oven to 350°.  For the crisp: In a medium mixing bowl, combine the almonds, oats, flour, brown sugar, salt and cinnamon. Stir in the honey. Add the cold butter and cut it into the oat mixture with a pastry blender or a fork. Place in the refrigerator while you prep the filling.  For the filling: In a large mixing bowl, combine the sugar and cornstarch. Stir in the cherries, almond extract and lemon juice until well coated.   Butter a 10-inch cast-iron skillet. Place the cherry filling in the skillet in an even layer and top with the crisp topping. Bake for 35 to 40 minutes, until the edges are bubbly and the topping is golden brown. Let rest 15 minutes then serve with scoops of vanilla ice cream.

He is an ice cream lover—but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop. I work part-time as a church secretary...teach piano in our home...and enjoy making clothes for myself and our 3-year-old daughter. Cross-stitch is one of my favorite hobbies.
