The Perfect Cream Cheese Pie Crust Recipe | Allrecipes image

This pie crust will not crumble or tear when you try to pick it up. I use it for the holidays. It makes 6 pie crusts, so I make it for Thanksgiving and then freeze what I don't use for Christmas. It can be frozen for up to 6 months.

Number Of Ingredients 4

1 (8 ounce) package cream cheese, softened
2 cups butter, softened
1 pinch salt
6 cups all-purpose flour

Steps:

  • Cream together the cream cheese, butter, and salt in a large mixing bowl until evenly blended. Mix in the flour until a dough forms; divide into 6 balls. Use immediately or wrap tightly and freeze until needed.

Use this recipe to make our Roasted Cauliflower and Manchego Hand Pies and our Cherry Tomato, Bocconcini, and Zucchini Pie.

Yield Makes enough for eight 4-inch double-crust pies or one 10-inch pie

Number Of Ingredients 7

2 1/4 cups all-purpose flour
1/2 cup grated manchego or Parmesan cheese
Pinch of sugar
1 teaspoon coarse salt
3/4 cup cold (1 1/2 sticks) unsalted butter
1 egg yolk
1/4 to 1/2 cup ice water

Steps:

  • Pulse flour, cheese, sugar, salt, and butter in a food processor until mixture resembles coarse meal. Add egg yolk; pulse to combine. With processor running, drizzle in 1/4 cup water until dough just comes together. (If dough is still crumbly, add up to 1/4 cup more water, 1 tablespoon at a time.) Do not process for more than 20 seconds. Wrap in plastic. Refrigerate until cold, about 30 minutes.

Cover and refrigerate for 30 minutes. , In a large bowl, beat the cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Stir in vanilla and lemon zest just until blended. Pour into prepared crust. , Bake at 325° for 20-25 minutes or until center is almost set. Remove from the oven; let stand for 5 minutes (leave oven on). Combine the sour cream, sugar and vanilla; spread carefully over pie. Bake 5 minutes longer. Cool on a wire rack for 1 hour. Refrigerate overnight. Garnish with mint and lemon zest if desired. Refrigerate leftovers.
