3 1/2 cups sharp cheddar cheese, shredded
1 (1 ounce) package hidden valley ranch dressing mix
2 cups chopped pecans
4 pecan halves
assortment of fine cracker

Steps:

  • In a large bowl, mix together cream cheese, Cheddar cheese, and ranch dressing mix.
  • Form into 1 large ball (or 2 small).
  • Roll in chopped pecans to coat surface.
  • Decorate the top with pecan halves.
  • Refrigerate for at least 4 hours, if not overnight.
  • Serve with an assortment of crackers.

1?¼ cups shredded extra-sharp Cheddar cheese
1 medium firm ripe pear, finely chopped
1 scallion, white and green separated, finely chopped
½ teaspoon salt
¼ teaspoon ground pepper
? cup finely chopped toasted pecans

Steps:

  • Stir cream cheese, Cheddar, pear, scallion white, salt and pepper together in a medium bowl.
  • Coat a large piece of plastic wrap with cooking spray. Scoop the cheese mixture onto it. Using the plastic wrap to help you, form the cheese mixture into a ball, then completely wrap in plastic. Refrigerate for at least 1 hour and up to 2 days.
  • Just before serving, combine pecans and the reserved scallion greens in a shallow dish. Roll the cheese ball in the mixture, pressing to adhere.

  • In a large bowl, cream butter and cheese until light and fluffy. In another bowl, whisk flour, salt, garlic powder and cayenne; gradually beat into creamed mixture. Stir in pecans., Shape into eight 10-in. long logs. Wrap in plastic. Refrigerate until dough is firm, 2 hours., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake until edges are crisp and lightly browned, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool completely. Refrigerate in airtight containers.
