This is a recipe that I came up with after just being tired of that granola flake stuff that you need a spoon to eat. I wanted something I could pick up when I was on the go, but still something with that wonderful granola crunch. So, this is it. ENJOY!

Yield 6-8 serving(s)

Number Of Ingredients 10

2 1/2 cups old fashioned oats
2/3 cup flour
1/2 cup packed brown sugar
1 teaspoon salt
1/2 cup your favorite nuts, chopped
1/2 cup butter (try not to use margarine)
1/2 cup pure maple syrup
1/4 cup dried cranberries
1/4 cup raisins
1/4 cup dates, chopped

Steps:

  • Preheat your oven to 325°F In a large bowl, stir together the first 5 ingredients; set aside.
  • In a microwave-safe bowl, melt the butter and maple syrup together in the microwave on high.
  • Stir the butter mixture into the dry ingredients and pour onto a lined baking sheet.
  • Bake for 10 minutes, flip the granola over and bake for about 10 minutes.
  • Remove from the oven and toss with the dried fruit while still hot.
  • Serve when cool.

This sweet and salty granola uses cereal, pecans, and oats to create addictively crunchy bunches for snacking on repeat.

Yield Makes about 8 cups

Number Of Ingredients 11

2 cups old-fashioned oats
1 cup bran flake cereal
1 cup large unsweetened coconut flakes
1 cup raw pecans
½ cup raw pumpkin seeds (pepitas)
½ cup raw sunflower seeds
? cup wheat germ
1 teaspoon kosher salt
½ cup pure maple syrup
½ cup virgin coconut oil, melted
1 large egg white

Steps:

  • Preheat oven to 275°. Toss 2 cups oats, 1 cup cereal, 1 cup coconut, 1 cup pecans, ½ cup pepitas, ½ cup sunflower seeds, ? cup wheat germ, and 1 tsp. salt on a rimmed baking sheet. ? Wait. Are oats gluten free?
  • Pour ½ cup maple syrup and ½ cup oil over and mix with clean hands until all nuts, seeds, and oats are coated.
  • Vigorously beat 1 large egg white in a medium bowl until very thick and foamy, about 45 seconds. Pour over oat mixture and mix with hands again until egg white is evenly distributed.
  • Spread out granola in an even layer.
  • Bake 30 minutes, then remove sheet from oven and stir once with a flexible metal spatula, turning mixture and spreading out again into an even layer.
  • Continue to bake, without stirring, until oats are toasted and crisp, 35–45 minutes longer. Let cool without stirring.
  • When granola is cooled, scrape bottom of tray with spatula to loosen granola and break into clusters. Serve or transfer to an airtight container.
  • Do Ahead: Granola can be made 1 week ahead. Store in an airtight container at room temperature.

  • When the granola comes out of the oven it should be nice and golden brown, extra crunchy on the outside and just slightly soft and chewy on the inside. Let cool completely then break it up into clusters and store in a covered container at room temperature.

  • Spread the mixture evenly onto the prepared pan. Bake at 325°F for 20 minutes. Gently stir and move the clusters around the pan to break up the granola and prevent the bits closest to the edge from burning. Bake for an additional 10 minutes, then gently stir again. Bake for an additional 4-8 minutes (for a total of 34-38 minutes), or until the granola is crunchy. Let the granola cool for 5 minutes before breaking apart any extra large clusters. Cool the granola completely to room temperature on the pan before transferring to an airtight container.
