Caribbean Ham boiled in veggies, spices and wine to deliver that wonderful caribbean taste, caramelized to perfection and served with pineapple slices for that exotic finish.

Number Of Ingredients 12

1 3 to 4 pounds cured/salted ham
3 medium size carrots
1 celery stalk
1 medium onion
2 – 3 whole cloves
1 bouquet garni (parsley, thyme and bay leaf)
2 cups of dry white wine
1 - 8 oz. can pineapple slices in syrup
1 cup brown sugar
2 tablespoon butter
1 teaspoon peppercorn
Salt to taste

Steps:

  • In a large stockpot of large container, add the ham, fill the container or pot with water to cover. Soak the ham for 24 hours, changing the water 3 times.
  • Slice the celery stalk, peel and cut the carrots. Stick the cloves to the onion and set everything aside.
  • Remove the ham from the soaking liquid and rinse. In another stockpot, place the ham, celery, carrots, onion, bouquet garni made with 2 sprigs of parsley, 1 large sprig of thyme and one large bay leaf. Add wine and peppercorn. You may add a little bit of salt if desired but not necessary. Cover with water and bring to a boil. Let ham cook for about 2 hours over low to medium heat.
  • Remove ham from cooking liquid. If desired remove rind from ham. Pour the pineapple syrup over ham and sprinkle brown sugar all over ham also. Place ham under the broiler and let caramelized on all sides. Remove immediately after ham is well caramelized. Set aside
  • In a small pan, melt the butter and add the pineapple slices. Heat slices on both sides. Remove from heat and decorate the ham with the pineapple slices and with the veggies

¼ cup nonfat sour cream
2 tablespoons minced chutney
¼ teaspoon curry powder
1 (8-inch) pita bread round, cut in half
4 ounces thinly sliced reduced-fat, low-salt ham
2 slices canned pineapple in juice, drained
1 teaspoon finely chopped fresh cilantro or parsley
1 tablespoon sliced green onion
½ cup alfalfa sprouts

Steps:

  • Combine first 3 ingredients in a small bowl. Spread sour cream mixture in pita halves.
  • Place ham and pineapple in pita halves; sprinkle evenly with cilantro and green onion. Top with alfalfa sprouts. Serve immediately.

Ham Caribbean1 1/2 lb Fully cooked center-cut ham 1 cn Pineapple chunks in juice; 1/4 c Brown sugar packed1 tb Cornstarch 1/8 ts Ground cloves or nutmeg 1/3 c Orange juice; OR 1/4 c Orange juice + 2 tablespoons 1/2 c Light raisins Trim fat from ham. Slash edges of ham at 1" intervals. Place on a rack in a shallow baking pan. Bake in a 350F degree oven for 30 minutes.
