This creamy, ultra-cheesy Mexican casserole makes for a satisfying, quick, and easy dinner that the whole family will love. All you need are 6 simple ingredients and 25 minutes. How can you resist?

Ingredients

3 chicken breast halves, cubed
1 can Rotel
1 bag tortilla chips
1 can cream of chicken soup
1 small can chopped green chiles
1 pound shredded cheddar cheese

Steps:

Cook and dice chicken. Mix together Rotel, soup, green chiles, and cheese. Heat mixture approximately 1 1/2 minutes in a microwave, or until melted. Add chicken. In a casserole pan, layer 1/2 chips and 1/2 cheese mixture. Repeat layers and top with some crushed chips. Bake at 350 degrees for 20 minutes, or until hot and bubbly.

1 pound ground chuck beef (80% lean)
¾ cup chopped yellow onion
1 (1.25 ounce) package chili seasoning mix
1 (16 ounce) can beans in chili seasoned sauce, undrained
1 (14.5 ounce) can Hunt's® Diced Tomatoes, undrained
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (8 ounce) can Hunt's® Tomato Sauce
1 cup water

Steps:

Cook beef and onion in large saucepan over medium-high heat 5 minutes or until beef is crumbled and no longer pink, stirring occasionally; drain.
Stir in seasoning mix. Add remaining ingredients; bring to a boil. Reduce heat to medium; simmer 10 minutes, stirring several times.
