FRENCH TOAST WITH MAPLE WHIP CREAM | UMAMI



French Toast with Maple Whip Cream | Umami image

This recipe uses French bread and grated orange peel to create thick slices of French Toast that have a subtle hint of orange. The maple whip cream plays well with the orange and the thicker slices of toast. This is a really great special occasion breakfast or brunch.

1 loaf soft French bread
4 eggs
1 cup milk
3 dashes cinnamon
1 pinch salt
1/2 tbsp orange peel (fresh grated)
1 cup heavy cream
1 tsp sugar
1 1/2 tbsp maple syrup

Steps:

  • Start by whisking the eggs, milk, cinnamon, salt and orange peel together in a large bowl. Cut the bread into inch to inch and half slices. If you want to be fancy cut them on a bias for a great presentation.
  • To make the topping, use a mixer to whip the heavy cream, sugar, and maple syrup together until it has started to come together into thick peaks.
  • To cook the French Toast heat a large skillet or similar pan on medium high heat. Dip the pieces of bread into the batter, flipping them over to coat both sides. When you take them out of the batter, hold them over the bowl for a second to get rid of any excess batter. The best way to cook these is in batches with each piece going immediately from the batter to the pan.
  • Cook each piece for 2 to 3 minutes on each side, until they reach a nice golden brown.
  • Serve with maple syrup and whip cream.

½ cup unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
6 (1-inch thick) slices French bread
5 eggs
1?½ cups half-and-half cream
1 teaspoon vanilla extract
1 teaspoon brandy-based orange liqueur (such as Grand Marnier®)
¼ teaspoon salt

Steps:

  • Melt butter in a small saucepan over medium heat. Mix in brown sugar and corn syrup, stirring until sugar is dissolved. Pour into a 9x13 inch baking dish.
  • Remove crusts from bread, and arrange in the baking dish in a single layer. In a small bowl, whisk together eggs, half and half, vanilla extract, orange brandy, and salt. Pour over the bread. Cover, and chill at least 8 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove the dish from the refrigerator, and bring to room temperature.
  • Bake uncovered 35 to 40 minutes in the preheated oven, until puffed and lightly browned.
