Chinese Sizzling Rice Soup Recipe | Allrecipes image

Chinese is one of my favorite cuisines to cook as well as eat. By cooking the rice before it is added to the soup, you will enjoy the crunchy texture with the other flavors in this delicious soup.

Number Of Ingredients 13

3 ounces baby shrimp
3 ounces skinless, boneless chicken pieces cut into chunks
1 egg
4 tablespoons cornstarch
4 cups vegetable oil for frying
3 cups chicken broth
1 ounce mushrooms, chopped
2 tablespoons chopped water chestnuts
? cup diced bamboo shoots
? cup fresh green beans, cut into 1 inch pieces
½ teaspoon salt
1 tablespoon sherry
? cup uncooked white rice

Steps:

  • Mix together the shrimp, chicken, egg, and cornstarch.
  • Heat 3 cups of the oil in wok. When it is hot, add shrimp and chicken mixture. Cook for 1/2 minute and drain.
  • Place above mixture in pot with the broth, mushroom, water chestnuts, bamboo shoots, and green beans. Bring to a boil. Add salt and sherry. Return to a boil. Reduce heat and allow to simmer.
  • Meanwhile, heat the remaining 1 cup of oil until it is hot. Add rice and brown quickly. Drain and add to soup. Serve and enjoy!

This is another recipe found in a travel magazine over 20 years ago, that I made quite often, and was also a family favorite.

Number Of Ingredients 8

1 can(s) cream of mushroom soup, or chicken soup, or celery soup
1 1/2 cup(s) long grain rice, uncooked
1 package(s) dry onion soup mix
1 1/2 cup(s) water
1 cup(s) cleaned and sliced fresh mushrooms
4 - boneless skinless chicken breasts
1/2 teaspoon(s) paprika
- pepper to taste

Steps:

  • Clean chicken breasts, pepper to taste, sprinkle paprika over the tops of each breasts. In a 3 quart roaster pan add dry rice and dry onion mix, stir together, add chicken breasts to top of rice mixture. Add sliced mushrooms to top of chicken, pour water over the top, and cover pan. Put into preheated oven 350 degrees. Bake covered for 1 1/2 hours. Serve with salad.
  • When mixing the dry rice, and onion mix, also add the soup, and stir together, then pour into the roaster. Chicken still goes on top of the mixture.
