The menu at Tian Di Yi Jia, a two-year-old Beijing restaurant that specializes in imperial cuisine, depends on extraordinarily expensive or rare ingredients like shark's fin and abalone. But some of the dishes are simple and delicious, such as these fiery Sichuan shrimp. The Sichuanese typically use small freshwater shrimp, frying them whole with coriander, Sichuan peppercorns and lots of hot dried chiles until the shells become crispy and very, very spicy while the flesh remains delicate and sweet. Foo shifts the balance of flavors in this recipe, adding far more shrimp. If you can find freshwater shrimp in the shell, pop the whole fried thing into your mouth—but take care not to eat those peppers.Plus: More Seafood Recipes and Tips

1/3 cup vodka
3 tablespoons soy sauce
2 tablespoons ketchup
2 teaspoons rice wine vinegar or white wine vinegar
1/4 cup vegetable oil
10 dried red chiles
One 2-inch piece of fresh ginger, peeled and very thinly sliced
1 teaspoon Sichuan peppercorns
3 large garlic cloves, thinly sliced
1 3/4 pounds medium shrimp, shelled and deveined
Salt
3 scallions, white parts only, coarsely chopped

Steps:

  • In a small bowl, stir the vodka with the soy sauce, ketchup and vinegar. In a large skillet, heat the oil. Add the chiles, ginger and Sichuan peppercorns and stir-fry over high heat until the chiles and peppercorns darken and the ginger starts to brown, about 2 minutes. Add the garlic and stir-fry until golden, about 10 seconds. Add the shrimp, season lightly with salt and stir-fry until just cooked, about 3 minutes.
  • Remove the skillet from the heat and slowly add the vodka sauce. Using a long match, carefully light the sauce. Return the skillet to the heat and bring the sauce to a simmer, stirring. Add the scallions; serve.

800g firm white fish
6 tbsp cornflour
150ml vegetable oil
2 tbsp garlic cloves (crushed)
15 large dried chillies
1 tbsp toasted Sichuan peppercorns (crushed)
2 spring onions
1 long red chilli
1 cup rice
1½ cups water
2 tbsp Lee Kum Kee Premium Soy Sauce
2 tbsp Shaoxing cooking wine
2 tsp black vinegar
3 tsp Lee Kum Kee Chiu Chow Chilli Oil

Steps:

  • To Prep In a large pot add the rice and water. Simmer on stove top for 12 mins until cooked. Leave covered until serving, then fluff with a fork. While the rice is cooking, cut the fish into similar sized chunks. Lightly coat in cornflour and set aside. Finely slice the spring onions and long red chilli into strands. To Cook Heat the vegetable oil in a work on medium/high heat. Once hot, cook the fish in 2 batches (approximately 3 mins each batch), until crispy. Remove from work and set aside. Pour out half of the oil, then add the dried chillies, cook for 1 min and remove from the oil. Add garlic cloves and half of the Sichuan peppercorns, stir until fragrant. Return the fish to the wok, then add soy, Shaoxing wine, vinegar and chilli oil. Toss gently to combine. Remove from wok, then sprinkle on remaining Sichuan peppercorns and top with finely sliced spring onion and red chilli. Serve immediately with rice to enjoy the crispy coating.

All you chilli fans out there are going to love this take on Sichuan chilli chicken. And if there’s one chilli chicken dish you want to be able to cook at home, this is it. Spicy peppercorns and fiery chillies turn up the heat to maximum volume – this isn’t one for the faint-hearted! For the marinade, I use Chinese Shaoxing wine, which is great to have on tap in the pantry. It gives the marinade a wonderful aromatic flavour. You could use dry sherry instead if you can’t get Shaoxing wine.

  • Combine marinade ingredients in a large bowl with the chicken.? Set aside until ready to cook. ? Place Sichuan peppercorns in a dry frying pan or wok over medium-high heat. Toast the peppercorns, shaking the pan regularly, until they are aromatic and just starting to smoke. Transfer to a mortar and pestle and grind to a fine powder. ? Make the stir-fry sauce by mixing together the soy sauce, Chinese Shaoxing wine and sugar. ? Place the flour in a large tray or bowl. Add the marinated chicken pieces and toss to coat. Shake off excess flour before frying the chicken pieces. ? Fill a saucepan or wok to about 1/3 capacity with the vegetable oil. Heat over high heat. Once the oil is hot (325°F or 165°C or when a wooden spoon dipped into the oil forms small little bubbles) cook chicken in batches until golden and cooked through (about 3-4 minutes). Drain on paper towel. ? Heat 1 tbsp of oil in a clean wok or large frying pan over high heat. Add the garlic and stir-fry for 10 seconds. Then add the ginger and dried chillies. Then add the cooked chicken, Sichuan pepper powder, spring onions and the stir-fry sauce mixture. Stir-fry until well combined. Remove from heat and serve.
