CAKE RECIPE BY SANJEEV KAPOOR RECIPES

Steps:

• Preheat the oven to 180º C. Grease a five inch cake tin with some butter and dust with some flour.
• Sieve together the flour, baking powder and salt in a bowl and mix.
• Beat together the castor sugar and eggs in another bowl till it reach a ribbon consistency. Add the flour mixture and fold well.
• Heat the butter and milk in the microwave till the butter melts. Remove from heat and mix.
• Add the butter-milk mixture and vanilla essence to the flour-egg mixture and mix well to make a smooth batter.
• Pour the batter in the prepared tin, put the tin in the preheated oven and bake for forty to forty-five minutes. Remove from oven, cool and demould.
• Cut into wedges and serve.

Steps:

• Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
• Cream together butter and castor sugar in a bowl with an electric beater. Break in eggs, one by one, and whisk well.
• Sieve together flour and baking powder into another bowl. Add almond slivers, pistachios and raisins and mix. Add oats and mix well.
• Fold mixed fruit pulp and flour mixture gradually into the egg mixture. Add mixed fruit juice and mix well.
• Pour the batter into the greased loaf tin and tap.
• Place the tin in the preheated oven and bake for 30-35 minutes. Remove from oven, cool and demould.
• Slice and serve.
