- Preheat oven to 375 degrees F (190 degrees C). Prepare a large baking pan with cooking spray.
- Whisk together the olive oil, cumin, coriander, paprika, turmeric, oregano, pepper, and chili powder in a large bowl. Place the egg whites in a separate large bowl.
- Toss the potato wedges first with the egg whites and then with the olive oil mixture. Arrange the seasoned wedges in a single layer on the prepared baking pan.
- Bake in the preheated oven, turning occasionally, until crispy, about 40 minutes.

- Heat the oil in a roasting tin. In a small bowl, combine the spices, sugar and salt. Tumble the potatoes into the hot oil, then sprinkle over 1 tbsp of the spice mix (see tip). Roast for 40 minutes, turning regularly, until crisp.
GRILLED CAJUN POTATO WEDGES | IDAHO POTATO COMMISSION
- 1. Preheat grill to 400°F. 2. Cut potatoes into wedges – slice the potato in half lengthwise, then cut each piece in half again to create quarters. Cut each quarter in half or into thirds if the potato is very large. 3. In a medium mixing bowl, toss potato wedges with olive oil and set aside. 4. In a small mixing bowl, combine all ingredients for the Cajun spice blend and whisk to combine thoroughly. 5. Sprinkle 4 tablespoons of the spice blend over the potato wedges and toss to combine. 6. Place potato wedges on the grill and cook for 10 minutes. Flip potatoes over and cook for an additional 10 minutes (lowering the temperature of the grill if necessary), or until potatoes are cooked through. 7. Make the dipping sauce by combining mayonnaise with 1 tablespoon of the spice blend and stir to combine. 8. Serve warm with dipping sauce, if desired.
