1 tablespoon olive oil
1 1/2 lbs 90% lean ground beef or 1 1/2 lbs very lean stew meat
1 onion, finely chopped
28 ounces tomato juice or 28 ounces crushed tomatoes
2 beef bouillon cubes
2/3 cup barley (using barley instead of rice helps cut down on carbs) or 2/3 cup rice, rinsed & uncooked (using barley instead of rice helps cut down on carbs)
2 teaspoons Splenda sugar substitute
2 -3 teaspoons sweet paprika
6 -12 garlic cloves, minced (1-2 tablespoons)
1 teaspoon pepper
1/4 teaspoon Tabasco sauce (2 shakes)
2 lbs cabbage, coarsely chopped (1 medium head)
3 (14 1/2 ounce) cans beef broth

Steps:

In a pot, warm the oil over medium heat, and saute beef and onions until onions are soft and beef is browned (8 minutes).
Drain off the fat, and add the tomatoes, bouillon, barley, splenda, paprika, garlic, pepper, and tabasco; mix well.
Put the cabbage in the crock pot, and top with meat mixture (Do NOT stir); top with beef broth.
Cover and cook on LOW for 9 hours.
Stir soup well; continue to cook covered on LOW for another hour.

I'm sure many of you will be enjoying the classic Irish-American dish, corned beef and cabbage, which I am sharing from the archives! So easy to make in the slow cooker, I used frozen pearl onions and parsnips instead of potatoes to make this easy-peasy!

Ingredients

2 lbs lean corned beef brisket (all fat trimmed off)
1 cup frozen pearl onions
2 medium carrots (peeled and cut into chunks)
2 medium parsnips (peeled and cut into chunks)
1 small head cabbage (cut into 6 wedges)
1/4 cup chopped fresh parsley
2 bay leaves
1/8 tsp whole peppercorns

Steps:

In a 5-6 qt crock pot, place brisket, carrots, parsnips, pearl onions, parsley, bay leaves, peppercorns and 3 cups of water.
Cover and cook on high 4 hours.
Add cabbage, cook on high 1 hour 20 minutes more.
Remove meat, slice and serve with Cauliflower Puree or Buttermilk Mashed Potatoes. Enjoy!

Cover pot and cook on low for 5 to 6 hours, until the chicken is cooked through. Remove chicken from Crock-Pot and transfer to a large bowl. Using two forks, shred into bite-size pieces. In a medium bowl, whisk together flour and cream. Pour mixture into Crock-Pot and stir to combine. Return chicken to Crock-Pot and add cheddar and Parmesan. Turn heat to high, cover and cook for 30 minutes more, or until the cheese has melted and the soup has thickened. Taste for seasoning and add more salt and pepper if necessary. Ladle into soup bowls and serve immediately. Garnish with sour cream and more cheese.
