Saltine Toffee Cookies Recipe | Allrecipes image

This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

Yield 1 cookie sheetful

Number Of Ingredients 5

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Line cookie sheet with saltine crackers in single layer.
  • In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  • Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

Old fashioned toffee with chocolate and chopped nuts.

Number Of Ingredients 6

2 cups butter
2 cups white sugar
1/4 teaspoon salt
1 teaspoon vanilla
2 cups semisweet chocolate chips
1 cup chopped almonds (optional but recommended, toast almonds before adding to toffee)

Steps:

  • Cover a large baking sheet with aluminum foil or parchment paper.
  • In a medium to large heavy bottomed saucepan, combine the butter, sugar and salt over low heat until butter is melted, whisking constantly. Bring to a steady (not rolling) boil over medium to medium-high heat, and cook, whisking constantly, until the mixture has reached 285 to 300 degrees F (137 to 150 degrees C).
  • Remove toffee from heat and stir in vanilla. Pour mixture onto the prepared baking sheet. (If desired, you can sprinkle some of the nuts on the baking sheet before pouring on the toffee).
  • Sprinkle the chocolate chips over the top, and let chocolate soften for a few minutes. Spread the chocolate into a thin even layer. Sprinkle with chopped almonds.
  • Refrigerate until set. Break into pieces, and store in an airtight container.

Hard crack stage is 300 degrees, and you can certainly go that high if you want. See, there is wiggle room, even in candy recipes! I would rely more on the color of the toffee though. The peanut butter trick really does work great.
