TOP SECRET RECIPES | P.F. CHANG'S GARLIC SNAP PEAS
Menu Description: "Stir-fried with garlic."This is a standard side dish at the country's biggest Chinese dinner chain, and it'll take you just a couple of minutes to duplicate at home as a good veggie side for any meal, Chinese or otherwise. It's especially good when you're pressed to slam together a last minute vegetable for tonight's dinner. You can use a wok for this, but I always just use a medium-size sauté pan. The trick is to sauté the snap peas quickly over high heat, tossing often, until they're hot, yet still crispy and bright green. You get the garlic in right at the end, and then quickly pull the pan off the heat, so the garlic doesn't scorch.  Have you decided on an entrée? There's a lot more P.F. Chang's copycat recipes here. CHINESE FRIED RICE WITH SHRIMP AND PEAS RECIPE - NYT COOKING
This is a more subdued version of fried rice than the spicier Thai fried rice. It’s a great dish to make if you have cooked rice on hand and a great vehicle for whatever vegetables may be in your refrigerator. Feel free to add other cooked vegetables, meat or seafood.

  • Heat a wok or large, heavy nonstick skillet over medium-high heat until a drop of water evaporates upon contact. Add the remaining oil and swirl around the pan, then add the shrimp and cook about one minute, stirring and tossing with a spatula or wok scoop until just about cooked through and pink. Add the garlic and ginger, and stir-fry for 30 seconds. Add the sherry, and stir everything together. When the sizzling stops, pour in the remaining beaten egg. Stir-fry until scrambled, and add the rice. Cook the rice — scooping it up, then pressing it into the pan and scooping it up again — for about two minutes. Stir in white and lighter green parts of the scallions, the peas and the soy sauce. Stir together for about half a minute, and transfer to a warm serving platter. Sprinkle the egg strips, scallion greens and cilantro over the top. Serve hot.

COLD PEA FLOUR RECIPE - SIMPLE CHINESE FOOD
Cao Cao once wrote a poem: Dukang is the only way to relieve worries. At this moment, Cai Caiwu wants to chant a poem: How to relieve the heat, only cold food.
Under the high temperature of more than 40 degrees, the weather will not cherish us, only self-help. In addition to all kinds of popsicles, the street stalls serve cold food. A bowl of ice-cold jelly, chilled shrimp, sago or cold noodles can not only fill your stomach but also relieve the heat. It really kills two birds with one stone. [Welcome to exchange food, please search WeChat public account: "Shiqu Cai Caiwu" or directly add "EJM2467"]
When I was young, I often saw a basin with ice on the street, covered with a piece of glass and cloth, and there were cold prawns hidden in it. The white and tender prawns were added with two or three spoons of brown sugar. Suddenly the breeze came to forget all the sultry heat. The cold shrimp in memory is a weapon for relieving heat.
But cold prawns are snacks after all, and they cannot be used as cooking for three meals a day. You have to eat seriously when you order. In summer, the appetite is inherently poor, and my mother will change the cooking style. Naturally, refreshing and delicious summer meals are indispensable on the dinner table. The jelly is a frequent visitor at our summer table, and the seasoning is a delicious dish. No oily smoke and low carbon.
Because the ingredients used to make jelly are different, there are different types of jelly. Some are made of rice, such as Cantonese-style jelly and Jiangxi jelly; and they are also made with peas, such as Rongchang yellow jelly. No matter what kind of material is used, each has its own characteristics. What Cai Cai Wu shared today is cold pea flour.
Pea flour is made of dried pea grains, peeled off the skin, soaked in water, mixed with water and ground into a slurry, filtered and boiled to form a paste, and then condensed after cooling. The texture is smooth and tender, the color is turmeric, and the taste has the special fragrance of peas. In addition to being delicious, pea flour also has the effects of nourishing the middle and nourishing qi and detoxification. If you don’t want to cook, a simple plate of cold pea flour is also a good choice.
