A buddhist vegetarian dish eaten on the first day of the Chinese New Year. It traditionally contains 18 ingredients that are considered auspicious. The servings are as part of a Chinese banquet for 6-8 people. If you are making just this I have no idea how many people it would feed! Some info about the more Asian ingredients: Dried lily buds aka golden needles. They are the dried flower of the day lily. soak before using. Dried black fungus aka wood ear fungus or cloud ear fungus Tofu puffs = golden squares of fried tofu found in the refrigerator section.

30 g dried lily buds (optional)
15 g dried black fungus (wood ear or cloud ear)
8 dried shiitake mushrooms, stalks discarded
100 g halved tofu, puffs (2 cm)
2 tablespoons vegetable oil
1 carrot, sliced diagonally thinly
4 stalks Chinese celery or 2 stalks celery, thinly sliced diagonally
1 tablespoon fresh ginger, finely grated
150 g bean sprouts
60 ml oyster sauce
1 teaspoon sesame oil

Steps:

  • Place the lily buds, black fungus, Shiitake mushrooms and tofu in separate bowls. cover each with boiling water and soak for 30 minutes. Drain the bowls and squeeze the excess water from the tofu. Cut the fungus into bite-sized pieces and halve the shiitake.
  • Heat the oil in a wok over high heat. Stir-fry carrot, celery and ginger for 30 seconds. Add soaked ingredients, remining ingredients and 1/4 cups water. Mix well. cover with a lid and cook for 3 minutes or until heated through. Serve.

You may recognize the name of this dish from the menu of your local Chinese restaurant. In order to get a great "sear" on the tofu, allow time for each side to turn golden before stirring.

Yield 4 servings (serving size: 1 1/2 cups tofu mixture and 2/3 cup rice)

Number Of Ingredients 11

1 (3 1/2-ounce) bag boil-in-bag brown rice
¾ cup organic vegetable broth (such as Swanson Certified Organic)
2 tablespoons low-sodium soy sauce
2 teaspoons minced peeled fresh ginger
2 garlic cloves, minced
1 tablespoon cornstarch
1 tablespoon olive oil
1 (14-ounce) package water-packed extrafirm tofu, drained and cut into 1-inch cubes
1?½ cups sliced carrot (about 4 carrots)
1 (14-ounce) can whole baby cocktail corn, rinsed and drained
1 cup snow peas, trimmed

Steps:

  • Cook brown rice according to package directions. Drain; keep warm.
  • While rice cooks, stir together broth and next 4 ingredients in a small bowl. Set aside.
  • Heat a large nonstick skillet over medium-high heat; add oil. Add tofu, and cook 10 minutes or until golden on all sides, turning occasionally. Remove from pan, and set aside.
  • Add carrot, baby corn, and snow peas to pan; sauté 3 minutes or until vegetables just begin to soften.
  • Stir in broth mixture. Cook 2 minutes, stirring constantly. Stir in reserved tofu. Serve immediately over rice.

  • Sauce: Combine all ingredients in a bowl; set aside. Stir-Fry: Heat oil in work or possibly large deep skillet over high heat. Add in garlic, ginger, green onions and mushrooms; stir-fry 1 minute. Add in carrot, bamboo shoots, water chestnuts, corn, peas and cabbage; cook about 2 min. Add in sauce, cover and cook 5 min. Drain noodles, and add in to work with tofu. Reduce heat to low and cook till most of sauce is absorbed, about 15 min. Serve as is or possibly over rice. This recipe yields 6 servings. Comments: You can always find this dish on Chinese restaurant menus. It traditionally contains dry black moss, dry bean curd (tofu) stick and ginkgo nuts, but my simplified version is just as good and is easy to prepare.
