Quick Brown Rice Congee | Forks Over Knives image

Congee is a hot rice porridge eaten all over Asia, usually for breakfast. The meltingly tender rice makes a luscious base for a wide variety of toppings, so feel free to improvise and add to the suggestions below. For creamier results, double the liquid (you can use half vegetable broth, half water), and simmer the congee for 30 to 40 minutes.  Already have some cooked brown rice in the fridge? Use 3 cups, and skip Step 1.

1 cup dried brown rice
1 14-oz. package extra-firm tofu, drained and cut into cubes
8 oz. sliced cremini mushrooms
3 cups mushroom or vegetable broth
1 tablespoons reduced-sodium soy sauce
3 slices fresh ginger root
2 cloves garlic, minced (2 tsp.)
2 scallions (green onions), thinly sliced
Sesame seeds, for garnish

Steps:

  • Cook brown rice according to package directions. Set aside.
  • Preheat the oven to 400°F, and line 2 baking sheets with parchment paper or silicone baking mats. Spread tofu cubes on one baking sheet and mushroom slices on the other. Roast 10 minutes. Flip tofu cubes and mushroom slices, and roast 8 to 10 minutes more or until browned on the edges.
  • Meanwhile, bring the rice, broth, soy sauce, ginger, and garlic to a simmer in a large saucepan. Simmer, partially covered, 10 minutes, or until rice is soft and has absorbed some of the broth. Spoon the congee (rice) into bowls, and top with roasted tofu cubes, mushrooms, sliced green onions, and sesame seeds.

Half a cup Gorgon rice
1 cup brown rice
2 pcs Portunus
200 g Yam
1 small piece pumpkin
100 g green beans
200 g Pig bone
2 tsp salt

Steps:

  • Wash the gorgon, soak it in water for 3 hours in advance, a cup of brown rice
  • Wash the gorgon and brown rice together, put it in the pot, add water to 1.5 cups
  • Peel the yam, cut the hob into pieces, soak in vinegar water to prevent oxidation, cut the pumpkin into small pieces, remove both ends of the kidney beans, and fold them into two pieces
  • The tube bones are salted one day in advance, which will be more delicious. Two swimming crabs, clean with a brush
  • Rinse the tube bones under running water to remove excess salt
  • Put the yam, tube bones, and pumpkin into the electric pressure cooker
  • Because of the tube bones, the gorgon is more difficult to cook, so choose the button for chicken, duck and fish, and you need to add dishes later, so remember to press the button for adding dishes midway, select the cooking method, the pressure is 40, and then press start
  • Wait until the last 10 minutes, chop the swimming crabs in half when adding dishes to the sound
  • If you still can’t open the lid, you can press and hold the quick exhaust button for 2 or 3 seconds to accelerate the exhaust. Put the green beans and crab cubes into the pot, add salt, and close the lid and continue until the cooking is complete.
  • Even if the porridge is still relatively thin, rice and gorgon are particularly prone to swelling. After opening the lid for half an hour, the sticky scoop will not move, so if you like the thinner, hurry up and eat.
