I made made these cupcakes for my nephew's birthday and they turned out so creepy that I thought I would share them here for Halloween. I tried out a few different methods for sugar glass and included the method which produced the clearest glass for me.

2 ¼ cups of cake flour
1 tbsp. of baking powder
1 ¼ cups of whole milk (observe room temperature)
4 large egg whites
1 ½ cups of sugar
1 stick (= 8 tbsp. butter)
¼ tsp. of cream of tartar
½ of kosher salt
1 vanilla bean (cut in half and scraped)
2 tsp. of vanilla extract
2 cups of confectioner’s sugar (sifted)
½ cup of butter
2 tbsp. of milk
1 tsp. of vanilla extract
For the frosting
3 ½ cups of sugar
1 cup of light corn syrup
2 cups of water
¼ tsp. of cream of tartar
1 jar of raspberry preserves
1 drop of red food color
1 tbsp. of water

How to make Broken Glass Cupcakes

1 Can white frosting
1 Box Red Velvet Cake Mix
Sugar Glass:
2 cups water
1 cup light corn syrup
3 1/2 cups white sugar
1/4 teaspoon cream of tartar
Edible Blood:
1/2 cup light corn syrup
1 tablespoon cornstarch
1/4 cup water, or more as needed
15 drops red food coloring
3 drops blue food coloring

Steps:

  • Prepare Red Velvet Cake Mix According to box, line cupcake tins with paper cupcake liners.
  • Divide cake batter between lined cupcake tins.
  • Bake according to box instructions. Let cool and frost cupcakes with white frosting.
  • Make the sugar glass. Mix 2 cups water, 1 cup corn syrup, white sugar, and cream of tartar in a large saucepan; bring to a boil. Use a candy thermometer and boil sugar syrup until temperature reaches 300 degrees (hard ball), stirring constantly. The mixture will thicken as water evaporates. When sugar reaches 300 degrees, quickly pour onto a metal baking pan. Cool until completely hardened. Break into "shards" using a meat mallet.
  • Make the edible blood. Mix together 1/2 cup corn syrup and cornstarch in a large bowl. Slowly stir in the 1/4 cup of water, adding more if necessary, until the corn syrup mixture has thickened to the consistency of blood. Stir in the red and blue food coloring.
  • Stab each frosted cupcake with a few shards of broken sugar glass. Drizzle on drops of "blood" to complete the effect.

  • "Okay, before I begin the instructions, I'd like to point out that I placed a star (*) on the Candy Thermometer because it is the most important item in your preparation of the Sugar Glass. With that said, let's begin. :) CUPCAKES --------------- 1 box of Red Velvet Cake Mix 3 eggs 1/2 cup Melted Butter 1 1/4 cups Skim Milk 1 cup of Frosting (more if needed) __________________________________________________ 1. Line cupcake tin with paper liners. 2. Prepare cake mix, pour into cupcake liners. 3. Bake cupcakes according to box instructions. 4. Allow cupcakes to cool completely before decorating with frosting, glass, and blood, respectively. ----------------------------------------------------------------------------------------------------------------------------- SUGAR GLASS --------------------- * Candy Thermometer 1 cup water 1 3/4 cups sugar 1/2 cup Light Corn Syrup 1 - 2 tbsp Mint Extract (add just before removing from heat) 1/8 tsp Cream of Tartar (for glass clarity) ________________________ Okay, now it's on to the tricky part. You will be handling hot, melted sugar for this segment, so please be extremely careful; I cannot stress this enough! According to my mother, who burned herself once with hot sugar; it is by far, the worst thing to burn yourself with! 1. Begin by combining water, corn syrup, cream of tartar, and sugar in a large saucepan, bring to a rapid boil and stir CONSTANTLY throughout. 2. After about 12 minutes of boiling, the sugar mix will gradually start to thicken and look like soft, boiling taffy. At this point, keep checking the temperature until it the sugar mix reaches 300°F (149°C) as indicated by your candy thermometer (Hard Crack Candy). 3. After sugar mix reaches 300°F (149°C), stir in desired amount of mint extract and remove from heat; quickly pour onto metal baking sheet and allow mixture to cool for about 30 minutes or until slightly warm; at this point, it may be placed in freezer for about 1 hour or until completely cool and hardened. 4. After sugar glass is completely cool and hardened, break into shards by using a hammer and a clean butter knife. --------------------------------------------------------------------------------------------------------------------------------------- EDIBLE BLOOD ---------------------- 1/8 cup corn syrup 2 - 3 tbsp Hershey's Strawberry Syrup 20 drops Red Food Coloring 1 drop of Blue Food Coloring 1/8 tsp Corn Starch (optional) _________________________________________ This is the easiest part of the whole procedure, only one step. 1.
