This Philly-inspired breakfast cheesesteak piles chicken sausage, peppers and cheese atop thick slices of French toast.

Steps:
- In medium bowl, whisk together 2 eggs and milk; dip bread into egg mixture until fully coated. Cook French toast on griddle or large skillet over medium heat until golden brown on both sides.
- Cook sausage patties according to package instructions. Cut into strips.
- In separate skillet, heat olive oil over medium heat. Add garlic, peppers and onions and saute until browned and tender.
- Add cooked sausage strips to pepper and onion mixture; top with cheese and heat until cheese is melted.
- Cook remaining eggs over easy, or as desired.
- Assemble cheesesteaks by layering french toast with eggs, and pepper, sausage and cheese mixture. Season with salt & pepper and serve open-faced.

Steps:
- In large bowl, combine steak, salt and pepper, tossing gently to coat.
- In large skillet, heat oil over medium-high heat.
- Add steak; cook for 5 minutes, stirring frequently.
- Add garlic, onion and bell pepper; cook for 4 minutes, or until vegetables are tender.
- In 3-quart baking dish, place English muffins evenly over bottom.
- Top with steak mixture.
- Sprinkle evenly with cheeses and Italian seasoning.
- In large bowl, beat eggs, half-and-half and milk until smooth; pour over casserole.
- Cover, and refrigerate at least 8 hours.
- Remove casserole from refrigerator, and let stand at room temperature for 30 minutes.
- Preheat oven to 350 degrees F.
- Bake casserole for 1 hour and 10-20 minutes, or until eggs are set in center.
- Cover with aluminum foil, if necessary, to prevent excess browning.
- Let stand for 10 minutes before serving.
- Garnish with fresh oregano, if desired.

- Remove steak from refrigerator and let come to room temperature, 30 minutes. Rub steak with 1 tablespoon vegetable oil and season all over with 1 ½ teaspoon salt, 1 teaspoon pepper, and ¾ teaspoon paprika. Heat a medium cast iron skillet over medium-high heat. Add steak and cook, flipping once, until a deep golden crust begins to form on both sides of the steak, about 5 minutes total. Reduce heat to medium-low and add butter to pan. Using a kitchen towel, carefully grip the skillet handle and tilt towards you so that the melting butter forms a pool at the bottom of the skillet. Using a spoon, continually baste butter onto steak to form a deeper golden crust. Flip steak and repeat, 2 to 3 minutes in total. Using a meat thermometer, check for doneness: 120-125°F for medium rare, 130°F for medium. Transfer steak onto a cutting board and let rest about 10 minutes. Meanwhile, heat remaining oil in a nonstick skillet over medium heat until shimmering. Crack egg into pan and cook 3 to 4 minutes, or until white is set and edges are just beginning to brown. Remove from pan and season with salt and pepper. Slice steak into 1" strips on a bias, against the grain. Serve steak with eggs and potatoes. Garnish with herbs and season with more salt, pepper, and paprika to taste.
