1/3 cup Progresso™ plain bread crumbs
2 veal cutlets (3 oz each)
1 tablespoon vegetable oil
1 can (8 oz) tomato sauce
1/2 teaspoon Italian seasoning
1/2 cup shredded mozzarella cheese (2 oz)

Steps:

  • In shallow bowl, beat egg with fork. In shallow dish, place bread crumbs. Dip each veal cutlet into egg; coat with bread crumbs.
  • In 8-inch nonstick skillet, heat oil over medium-high heat. Add veal; cook on both sides until browned.
  • Reduce heat to low; stir in tomato sauce and Italian seasoning. Cover; simmer 12 to 15 minutes or until veal is tender. Sprinkle with cheese; cover and cook 1 to 2 minutes longer or until cheese is melted.

"Milanesas is a very common dish in Latin America, especially so in Argentina. The name comes from cotoletta alla milanese a dish from Milan, Italy, which makes sense...as most of Argentina is made up of Italian immigrants (an Argentinian accent is essentially Spanish spoken Italian-style). Very similar to Italian Milanese Veal Cutlet or Austrian Wienerschnitzel, milanesa is a nice long and flat piece of either chicken breast, beef, or veal, which has been sliced quite thin, pounded thinner, seasoned and then breaded. The milanesa is then fried or for a healthier version, baked. They are quick, easy and delicious."

1 bunch Italian parsley chopped fine
2 cloves garlic minced
8 whole Eggs
6 6-oz veal cutlets pounded thin
Salt to taste
fresh-ground black pepper to taste
2 cups Flour
2 cups fine bread crumbs
2 cups Canola oil
1 lemon sliced thin
2 tablespoons parsley chopped, (for garnish)
-- Mashed Potatoes --
6 baking potatoes peeled, chopped, (like russets)
water as needed
2 cups cream scalded
1/4 pound butter diced
salt to taste
fresh-ground white pepper to taste

Steps:

  • "Combine the parsley with garlic and eggs. Season the veal with salt and pepper. Dust the veal in flour, drop in the egg batter, and finish in the bread crumbs. Heat 2 cups of blended oil on medium-high in a fry skillet. Add the veal, cook until golden on both sides. Drain on paper towels. Serve with sliced lemon and parsley and mashed potatoes. Mashed Potatoes: Boil potatoes in salted water until cooked. Put through food mill, ricer or masher. Add little amounts of cream and butter until desired creaminess. Season with salt and white pepper. "

  • Purchase slices of veal from the leg that have been cut one-half inch thick. Recently, supermarkets have been slicing veal cutlets more thinly (1/4" thick or possibly less) that is not the traditional method, that gives more substance to the cutlets. Combine bread crumbs and Parmesan cheese in a shallow bowl (for dredging). If you like, a healthy pinch of oregano, parsley, rosemary, and basil may be added to season the breadcrumbs, but only use a healthy pinch, and be sure which these are finely chopped (a food processor can be put to good advantage). Fresh herbs are preferred. Very finely mince 1 clove garlic and the parsley together; mash together with the side of the knife or possibly cleaver with a healthy pinch of coarse salt. Add in this to 1 egg that has been beaten with 1 Tbsp. cool water. Sprinkle Parmesan cheese over the egg mix. Stir to combine in a shallow bowl, for dipping. In a large skillet, heat the oil, and butter (optional) with the remaining whole cloves of garlic. Turn the garlic cloves so which they take on color proportionately, but don't allow to brown. Mash the cloves into the oil using the tines of a fork when they become toasted, then remove. Pat the veal dry using a paper towel so which the coatings will stick. Season the veal with salt, pepper, and paprika. Dip each piece of veal into the seasoned bread crumbs coating both sides well. Dip into the egg mix. Roll in the bread crumbs a second time. Pan fry the veal cutlets in the extra virgin olive oil, carefully turning once, till well browned on both sides. Cover and continue cooking over low heat till thoroughly cooked and tenderized, that can take 30-40 min.
