This is a variation of a traditional Korean recipe for marinated beef short ribs. My friends all request it repeatedly! Very tasty!

¾ cup white sugar
¾ cup soy sauce
¼ cup sesame oil
4 cloves garlic, minced
3 green onions, chopped
2 tablespoons sesame seeds
5 pounds beef short ribs

Steps:

  • Stir the sugar into the soy sauce in a bowl until the sugar dissolves completely. Whisk the sesame oil, garlic, green onions, and sesame seeds into the soy sauce. Place the short ribs in a large, sealable bag and pour the marinade over the meat. Marinate in refrigerator for 8 hours or overnight.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove the ribs from the bag; discard the marinade.
  • Cook the short ribs on the preheated grill until they are very firm, hot, and grey in the center, about 15 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

This simple marinated short ribs recipe delivers as promised. When you’re not in the mood to do much work, you need a marinade that does the work for you.

Number Of Ingredients 14

Vegetable oil (for grill)
2 lemongrass stalks, trimmed, tough outer layers removed
1 serrano chile
3 garlic cloves
1 1" piece ginger, peeled
1 Tbsp. dark brown sugar
1 Tbsp. extra-virgin olive oil
1 Tbsp. fish sauce
1 Tbsp. soy sauce
1¼ lb. boneless short ribs
Kosher salt
2 scallions, thinly sliced
½ cup cilantro leaves with tender stems
Sesame seeds and lime wedges (for serving)

Steps:

  • Prepare a grill for high indirect heat (for a gas grill, leave one or two burners off; for a charcoal grill, bank coals on one side); oil grate. Using a Microplane, finely grate lemongrass, chile (seeds and all!), garlic, and ginger into a medium bowl. (Alternatively, you can chop very finely, then mash to a paste using the side of your knife.) Add brown sugar, oil, fish sauce, and soy sauce and mix well.
  • Season ribs with salt and add to bowl. Turn as needed to coat completely. Let sit at least 10 minutes and up to 2 hours. (If marinating longer, wait to fire up the grill.)
  • Grill ribs over hottest part of grill, moving to cooler zone as needed if browning too fast, until well browned, about 5 minutes per side. Transfer to a cutting board and let rest 10 minutes before slicing.
  • Transfer ribs to a platter and top with scallions and cilantro and sprinkle with sesame seeds. Serve with lime wedges for squeezing over.

While writing this book I became obsessed with creating a simple, grilled boneless short rib recipe. The key is to trim the connective tissue that holds the bone to the meat. I found that often when you buy boneless short ribs, this tissue is still there, and it's tougher than a pair of Marine boots that have marched across Iraq. After that adjustment it's a matter of being patient at the grill. You want them nicely caramelized but you don't want to overcook them. They need to be pink inside to be tender enough to eat and enjoy. Serve with pinto beans cooked with garlic and cilantro or atop grits or mashed potatoes.

  • 3. Place the beef ribs on the grill, close the lid, and reduce the heat to medium. Turn the ribs every 3 to 5 minutes or so, so that every side gets slightly caramelized, 15 to 20 minutes total. (If your short rib pieces are small, it won't take quite this long.) The ribs should yield easily to the touch, not unlike a medium-rare steak or the way the tip of your nose feels. Reduce the heat a little more and brush the ribs with the sauce. Cover the grill and let cook for a minute or two for the sauce to set up, and then continue to turn and brush until all sides of the ribs have been glazed. Remove to a platter and let sit for 5 to 10 minutes, covered with foil. Serve.
