1 1/4 cups flour, plus extra for dusting
Pinch of salt
1 stick butter, cut into small cubes and frozen
1/4 cup ice water
16 ounces fresh blueberries
2 Golden Delicious apples, cored, peeled and cut into 1/2-inch dice
1/2 cup sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
2 teaspoons fresh lemon juice
Pinch of salt
2 tablespoons butter, cut into small cubes
1 egg
2 tablespoons turbinado sugar
Special equipment: 9-inch pie pan

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crust: In a food processor, add the flour and a nice pinch of salt. Pulse very lightly just to blend. Add the butter evenly around the flour and quickly pulse until the flour resembles small crumbles. Slowly pour the water through the spout until the dough begins to come together. Remove and quickly form into a disc. Tightly cover with plastic wrap. Refrigerate for 20 minutes.
  • Meanwhile, for the filling: In a large bowl, add the blueberries, apples, sugar, cornstarch, cinnamon, lemon juice and a pinch of salt. Stir to combine and set aside.
  • Remove the dough from the refrigerator and place on a lightly floured surface. Gently roll the disc into a circle big enough to fit into the pie pan and leave a 3-inch overhang. The dough should be about 1/8-inch thick. Using a pizza cutter, trim the edges of the dough. Place the dough into the pie pan and press gently against the bottom and sides to fit the dough into the pan. Pour in the fruit filling, and then scatter the butter evenly around the top of the pie. Fold the extra dough that's hanging off the edge over the top to create the top of the pie crust. Leave a hole in the center for ventilation.
  • Whisk the egg with 1 teaspoon water and brush the top with egg wash and then sprinkle with the sugar.
  • Place in the oven and bake until the crust is golden brown, about 35 minutes. Let the pie rest at least an hour before serving to let the filling set.

2 c. All-purpose Flour
2 1/4 tsp. Baking Powder
1/2 tsp. Salt
3/4 c. Whole Milk
2 c. Fresh Blueberries

FOR THE TOPPING:
3/4 sticks Butter
1/2 c. Sugar
1/2 tsp. Cinnamon
1/2 c. Flour
1/4 tsp. Salt

Steps:

  • Preheat oven to 350 degrees.Combine flour, baking powder, and a salt. Stir and set aside.Cream 1/2 stick plus 1 tablespoon butter with cinnamon and sugar. Add egg and mix until combined. Add vanilla and mix. Add flour mixture and milk alternately until totally incorporated. Do not overbeat. Stir in blueberries until evenly distributed.Grease a 9 x 13 inch baking pan. Pour in batter. In a separate bowl, combine topping ingredients and cut together using two knives or a pastry cutter. Sprinkle over the top of the cake.Bake cake for 40 to 45 minutes, or until golden brown. Sprinkle with sugar. Cut into squares and serve with softened butter.

  • For the scones: Preheat the oven to 425˚. Line a baking sheet with parchment paper. Grate the frozen butter on the large holes of a box grater into a bowl. Return to the freezer until ready to use. Whisk the cake flour, all-purpose flour, granulated sugar, baking powder, salt and baking soda in the bowl of a stand mixer. Combine the heavy cream and crème fraîche in a small bowl and chill. Add the frozen butter to the flour mixture. Using the paddle attachment, mix on medium-low speed until the butter is worked in, about 1 minute. Add the cream mixture and mix briefly, just until large clumps form, about 30 seconds. (The dough should hold together when you squeeze it.) Turn out the dough onto a floured piece of parchment paper. Pat and press into a rough square, then use a rolling pin to roll it into a 12-inch square. Using the parchment to help you, fold down the top one-third of the square, then fold the bottom third up over it, like a letter. Flip over the dough, re-flouring the parchment, and roll out again into a 12-inch square.  Scatter the blueberries on top of the dough, pressing them in. Roll up the dough into a log, like a jelly roll, using the parchment to help you (it’s OK if the berries poke through). Turn the log seam-side down and flatten so it is about 4 inches wide and 1 inch thick. Using a sharp knife, cut the log into three 4-inch squares, then cut each square diagonally in half. Transfer the scones to the baking sheet and brush with heavy cream. Bake, rotating the pan once, until the scones are golden brown, about 20 minutes. Let cool completely on the baking sheet. For the icing: Whisk the powdered sugar, 2 tablespoons plus 2 teaspoons milk, the vanilla bean paste, melted butter and salt until smooth. Stir in 1 more teaspoon milk if the icing is too thick. Spread on the scones and sprinkle with the pearl sugar.

  • ***Important: Be careful when frying with hot oil! If you have little ones in the house, put the pot of oil on the back burner.***To make the pastry, mix together the flour, sugar, and salt. Cut in the 1/2 cup of shortening until the mixture resembles coarse crumbs. Add 1 of the beaten eggs, stirring gently with a fork, then add the buttermilk, stirring gently until it all comes together. Form into a ball and refrigerate for at least 1 hour in a plastic bag. To make the pies, roll the pastry on a floured surface into a large rectangle, about 12 inches by 24-plus inches. Make sure the dough is rolled very thin! Using a pizza cutter or a knife, trim the edges to make a very uniform rectangle. Remove the scraps along the edge.Cut the rectangle in half across the middle, then make three cuts in the other direction so that you wind up with 8 smaller rectangles. Place a heaping tablespoon of pie filling on the bottom half of each of the rectangles, leaving plenty of room around the edges. Brush the other beaten egg around the edges of the half of the rectangle with the filling. Bring the top part of the rectangle over the bottom half, pressing lightly to remove air pockets. Press the sides to seal. Dip a fork in flour and crimp the edges gently so that they're extra sealed. Heat shortening or oil in a large pot over medium high heat until the temperature reaches 350 degrees. One to three at a time (whatever you're comfortable with) lower the pies into the oil using a slotted spoon or metal spatula. Cook until golden brown, about 3 to 4 minutes, turning it halfway. Remove to a paper towel-lined pan and repeat with the other pies.Sprinkle the pies generously with sifted powdered sugar. Serve warm!
