Blueberry Bars Recipe: How to Make It - Taste of Home image

Our three sons like these bars so much that after they were married, each of my daughters-in-law asked for the recipe.

Number Of Ingredients 13

1 cup butter, softened
1-3/4 cups sugar
4 large egg, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 can (21 ounces) blueberry pie filling
1/8 teaspoon ground nutmeg
GLAZE:
1-1/4 cups confectioners' sugar
2 tablespoons lemon juice
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture just until combined. , Spread half of the batter into a greased 15x10x1-in. baking pan. Spread with pie filling; sprinkle with nutmeg. Drop remaining batter by teaspoonfuls over the top. , Bake until golden brown, 40-45 minutes. In a small bowl, combine glaze ingredients until smooth. Drizzle over warm bars. Cool completely on a wire rack.

I remember helping my mother make these quick and easy to make bars when I was young. They were quickly gobbled up by my brothers if Mom wasn't watching. These bars are really yummy and taste like fudge.

Number Of Ingredients 4

1 cup(s) butter, cold
2 cup(s) dark brown sugar
2 - eggs
pinch - salt

Steps:

  • Cook the first 4 ingredients in a saucepan over medium heat for five minutes, stirring constantly. Remove from heat and add 2 teaspoons of vanilla.
  • Add 3 cups of graham crackers and 2/3 cups of finely chopped walnuts to the mixture, stirring well. Put mixture into an ungreased 9 x 13 pan and place in the fridge until fully cooled. These bars can be topped with any icing you fancy. I usually make a thin butter icing.
