Number Of Ingredients 11

1 (16-oz.) pkg. Hy-Vee double smoked thick-sliced bacon
10 (4x4-inch) wonton wrappers
0.5 tsp. of kosher salt
0.5 tsp. of Hy-Vee ground black pepper
8 Hy-Vee large eggs
0.75 c. of Hy-Vee whole milk
4 c. of baby kale
0.25 c. of Gustare Vita basil pesto
1 c. of shredded mozzarella cheese with cream cheese
2 avocados
0 Italian parsley

Steps:

  • 1.

    Arrange oven racks in the top and bottom thirds of the oven. preheat oven to 375 degrees. Line 2 large rimmed baking pan with foil. Place bacon in a single layer in each pan. Bake on 2 oven racks for 23 to 25 minutes or until crisp, rotating baking pans halfway through. Transfer cooked bacon to paper towels to drain. Coarsely chop bacon. Divide into 2 portions; set aside. Reduce oven temperature to 350 degrees.

    Lightly spray a large baking sheet with nonstick spray. Lightly spray both sides of wonton wrappers with spray. Place in a single layer on prepared baking sheet. Sprinkle with salt and pepper. Slightly fan wontons, if desired. Bake 10 to 12 minutes or until golden brown. Transfer baked wontons to a wire rack to cool.

  • 3.

    Lightly spray a 2-quart baking dish with nonstick spray; set aside. Whisk together eggs and milk in a medium bowl. Stir in baby kale, 1 pint cherry tomatoes, and one portion of cooked bacon. Transfer egg mixture to prepared baking dish. Add pesto in small spoonfuls to egg mixture; sprinkle with mozzarella cheese blend.

    Bake 40 to 50 minutes or until mixture is set and a knife inserted near center comes out clean (165 degrees). Let stand 10 minutes. Top with sliced avocados, baked wontons, and one portion of cooked bacon. Garnish with additional cherry tomatoes, and parsley, if desired.

In my family, I'm (Ian) called the 'Eggs Extraordinaire', and Molly and I take turns topping each others egg concoctions. This is by far the best. We've found that a couple dabs of chipotle Tabasco® sauce make all the difference when cooking eggs.

4 slices bacon, chopped
6 eggs
2 tablespoons sour cream
1 tablespoon oil, or as needed
1 tablespoon chipotle-flavored hot sauce (such as Tabasco® Chipotle Pepper Sauce)
3 vine-ripened tomatoes, chopped
1 avocado - peeled, pitted, and chopped
1 (6 ounce) package fresh spinach
½ cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Drain the bacon slices on paper towels.
  • Lightly beat eggs and sour cream together in a bowl.
  • Heat oil in a skillet over medium-low heat; cook and stir egg mixture and hot sauce in the hot oil until light and fluffy, 5 to 7 minutes. Fold tomatoes, avocado, and spinach into egg mixture just until warmed, 1 to 2 minutes. Sprinkle Cheddar cheese over egg mixture and cook until cheese is lightly melted, 1 to 2 minutes; season with salt and pepper.

SUPER SUNDAY BLT EGG BAKE | JUST A PINCH RECIPES
Perhaps this is something that's been made before... but I put a couple of twists on it to make it even better, and baked one up on Superbowl Sunday 2011. Enjoy this egg bake warm out of the oven, or the next day. If you're not someone who likes to mess around in the kitchen on mornings, make it ahead of time and cut the dish up into serving size pieces, and place into plastic bags or tight-sealing containers to freeze. When you want a hot breakfast fast, place a piece on a microwave safe plate and zap in the micro for a few minutes! TIPS: I used smoked, cooked bacon bits in a pouch for this recipe, but you can chop and fry regular bacon, too. Be sure to cook it very well until crisp, otherwise it may come out rubbery in the dish. Also, cool it completely and drain off all the fat, onto paper towels/kitchen paper.

  • When the timer goes off, remove dish from the oven, and remove foil. The egg bake might still be pretty wet in a small part of the center, and jiggle a bit. This is O.K. Don't attempt to "test" the dish with a toothpick or knife at this point. If you'd like to add some fresh herbs like basil or thyme, you can do so now. Sprinkle the remaining shredded cheese mixture over the top (over herbs, if added), place back into the oven and bake for 10 more minutes, or until cheese is golden and bubbly. The egg bake should tighten up more and stop being "jiggly" at this point. Let sit for about 5-8 minutes before cutting and serving. Enjoy!
