Quick-cooking and full-flavored skirt steak is perfect for stir-fries. Just be sure to slice it across the grain so the steak stays tender as it cooks.

½ cup low-sodium beef broth
2 tablespoons black bean-garlic sauce (see Tip) or oyster sauce
2 tablespoons Shaoxing rice wine or dry sherry
4 teaspoons cornstarch, divided
1 pound skirt or flank steak, trimmed and thinly sliced across the grain
3 tablespoons peanut or canola oil, divided
1 pound asparagus, trimmed and cut into 2-inch pieces
1 large red bell pepper, thinly sliced
2 scallions, thinly sliced, whites and greens separated
2 cloves garlic, minced

Steps:

  • Whisk broth, black bean (or oyster) sauce, Shaoxing (or sherry) and 2 teaspoons cornstarch in a small bowl. Toss steak with the remaining 2 teaspoons cornstarch in a medium bowl.
  • Heat 2 tablespoons oil in a large flat-bottom wok or cast-iron skillet over medium-high heat. Add the steak and cook, stirring once, until browned, 4 to 5 minutes. Transfer to a clean plate.
  • Add the remaining 1 tablespoon oil, asparagus and bell pepper to the pan; cook, stirring occasionally, until almost tender, about 4 minutes. Stir in scallion whites and garlic; cook, stirring, until fragrant, about 30 seconds. Whisk the sauce and add it to the pan along with the steak. Cook, stirring occasionally, until the sauce thickens, about 1 minute. Garnish with scallion greens.

Look for seitan—also called wheat gluten—in Asian markets or the refrigerated sections of health food or specialty stores. Black bean garlic sauce is sold in the international section of some supermarkets and at Asian markets.

Yield 4 servings (serving size: about 1 1/2 cups seitan stir-fry and 1/2 cup rice)

Number Of Ingredients 13

2 cups boiling water
1 ounce dried shiitake mushrooms
2 tablespoons Chinese rice wine or sake
2 tablespoons black bean garlic sauce (such as Lee Kum Kee)
2 teaspoons cornstarch
2 tablespoons canola oil, divided
2 cups thinly sliced drained seitan (about 8 ounces)
1 tablespoon finely chopped garlic
1 tablespoon finely chopped peeled fresh ginger
4 cups (2-inch) cut green beans (about 1 pound)
2 cups hot cooked brown rice
¼ teaspoon salt
Cilantro sprigs (optional)

Steps:

  • Combine 2 cups boiling water and mushrooms in a small bowl; cover and let stand for 20 minutes. Drain in a colander over a bowl, reserving 1/2 cup soaking liquid. Rinse mushrooms; drain well. Discard mushroom stems; thinly slice mushroom caps.
  • Combine reserved liquid, rice wine, black bean sauce, and cornstarch in a small bowl; stir with a whisk, and set mixture aside.
  • Heat 1 tablespoon canola oil in a large nonstick skillet or wok over medium-high heat. Add seitan to pan, and stir-fry 2 minutes or until lightly browned. Place seitan in a medium bowl. Heat remaining 1 tablespoon oil in pan over medium-high heat. Add garlic and ginger to pan; stir-fry for 30 seconds. Add mushrooms and beans; cover and cook 3 minutes. Add black bean sauce mixture to pan; cook 1 minute or until sauce slightly thickens. Add seitan to pan; cook 1 minute, stirring occasionally. Combine rice and salt; serve seitan mixture over rice. Garnish with cilantro sprigs, if desired.

I cooked my mussels seperately in water then added them to the wok to toss in sauce and heat through. My mussels were very dirty with thick beards so I removed and cleaned them as best I could and cooked them seperately so I did not end up with any grit in my stir fry. That and there is not much liquid to cook them in the sauce, if using smaller mussels you could add these to the wok and cover with a lid and they will open. I had very large mussels from Spain as that was all that was available. but I have to say were delicious compaired with the usual ones I buy.
