unsalted butter, softened
white caster sugar
egg, lightly beaten
plain flour, plus extra for dusting

Steps:

  • In a large mixing bowl, use an electric whisk to cream the butter with the sugar until well mixed and just creamy in texture. Do not overwork, or the biscuits will spread during baking.

    Beat in the egg until well combined. Add the flour and mix on a low speed until a dough forms. Gather the dough into a ball, wrap in cling film and chill for at least 1 hour.

    Preheat the oven to 190°C, fan 170°C, gas 5. Put the dough on a lightly floured surface and knead briefly, then roll out to 3mm thick. Cut, by hand or with cookie cutters, to your desired shape. Using a palette knife, transfer the biscuits to a baking tray lined with baking parchment.

    Bake for 12-14 minutes, depending on the size of your biscuits, until golden brown at the edges. Remove from the oven and transfer to a wire rack to cool.

Number Of Ingredients 10

2 cups all-purpose flour
1/2 cup powdered sugar
1 cup butter or margarine, softened
4 eggs
2 cups granulated sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
1/4 cup lemon juice
1 cup powdered sugar
2 to 3 tablespoons lemon juice

Steps:

  • Heat oven to 350°F. In large bowl with electric mixer, beat base ingredients on low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 20 to 30 minutes or until light golden brown.
  • Meanwhile, in large bowl with wire whisk, lightly beat eggs. Beat in remaining filling ingredients except lemon juice until well blended. Beat in 1/4 cup lemon juice.
  • Remove partially baked base from oven. Pour filling evenly over warm base.
  • Return to oven; bake 25 to 30 minutes longer or until top is light golden brown. Cool completely, about 1 hour.
  • In small bowl, mix 1 cup powdered sugar and enough lemon juice for desired spreading consistency until smooth. Spread glaze over cooled bars. Cut into bars.
