1 bundle celery
2 heads garlic (cleaned)
3 onions
6 leaves big leaf thyme
5 sprigs spanish thyme
8 sprigs fine leaf thyme
36 leaves chadon beni
12 pimento peppers
4 bundles chive
1/4 cup vinegar (optional)
1/2 cup water
Salt to taste
1 hot pepper (optional)

Steps:

  • Chop the onions, garlic, celery and pimento peppers (seasoning pepper) and add to chive, big leaf thyme, chadon beni and spanish thyme.
  • Add some of the ingredients, 1/2 cup of water and about 1/4 cup of vinegar in the blender.
  • Note: Add handfuls of the ingredients at a time and make sure the blender's cover is tightly secured. The ingredients will have to be blended in batches! You may add the hot pepper at this step if desired.
  • Blend until smooth. Strain the green seasoning mixture and collect the liquid below. The liquid will be reused to blend the other batches of ingredients.
  • Collect the strained mixture in a separate bowl.
  • When all the ingredients have been blended pour everything, liquid also, into a bowl and add salt to taste. Store in containers and refrigerate.

1 2.2-pound wheel of brie (or 8-ounce rounds)
6 sprigs rosemary
6 sprigs thyme
2 tablespoons olive oil
Cranberry-Pear Mostarda, Thyme-Roasted Walnuts, sliced pear, crackers, and sliced baguette (for serving)

Steps:

  • Place brie on a plate and freeze until very firm, about 30 minutes.
  • Preheat oven to 350°. Cut off top rind of brie with a sharp knife (it’s okay if you can’t get the rind off in one piece; brie will smooth out as it bakes).
  • Toss rosemary, thyme, and oil on a parchment-lined rimmed baking sheet until coated. Spread herbs evenly on parchment. Place brie in the center so that it covers about half of the herbs. Bake until cheese is melted, 15–20 minutes. Remove from oven and let rest to firm up slightly, about 5 minutes (if you skip this step, you risk spilling molten cheese all over your cutting board).
  • Strip leaves from uncovered herbs and sprinkle over brie. Using parchment and a wide spatula, carefully slide brie and covered herbs onto a cutting board.
  • Arrange mostarda, walnuts, pear slices, crackers, and baguette slices around cutting board; serve brie warm.
