4 cups bread flour
1?? cups warm water
3 tablespoons olive oil
1 tablespoon active dry yeast
1 teaspoon salt
1 teaspoon oil, for greasing pan
1 teaspoon cornmeal, or as needed
1 (14 ounce) can vegan pizza sauce
½ pound sliced fresh mushrooms
1 green bell pepper, sliced
1 onion, sliced
20 kalamata olives, sliced
oregano, or to taste
1 pinch crushed red pepper to taste
1 tablespoon olive oil, or as desired

Steps:

  • Mix bread flour, water, 3 tablespoons olive oil, yeast, and salt together in a large bowl; when the dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Place dough in a large, lightly-oiled bowl and turn to coat. Cover with a towel and let rise in a warm place for 2 hours.
  • Preheat an oven to 450 degrees F (230 degrees C). Lightly grease 2 14-inch pizza pans with 1 teaspoon oil; lightly dust each pan with cornmeal.
  • Divide dough in half and roll out into 2 thin rounds. Transfer each round to a prepared pizza pan.
  • Spread pizza sauce over dough; top with mushrooms, peppers, onions, olives, and oregano. Drizzle with 1 tablespoon olive oil.
  • Bake pizzas in the preheated oven until crust is golden and sauce is bubbling, about 20 minutes. Garnish with crushed red pepper.

small head cauliflower, cut into small florets

1 tbsp.

extra-virgin olive oil

1 tbsp.

apple cider vinegar

1/2 tsp.

garlic powder

1/2 tsp.

cayenne pepper

Kosher salt

Freshly ground black pepper

Cooking spray, for pan

2/3 c.

barbecue sauce, divided

(8-oz packages) store-bought pizza dough

1/2

small red onion, thinly sliced

1/2 c.

vegan mayonnaise

Juice of 1/2 a lemon

1 tbsp.

finely chopped chives, plus more for garnish

1 tbsp.

finely chopped parsley

1

clove garlic, minced

Kosher salt

Freshly ground black pepper

Steps:

  • Preheat oven to 400°. In a large bowl, toss cauliflower with oil, vinegar, garlic powder, and cayenne. Season with salt and pepper and spread in an even layer on a large baking sheet. Roast until florets are tender and slightly golden, 20 to 30 minutes, depending on the size of your florets.  When ready to assemble pizza, return cauliflower to large bowl and toss with 1/3 cup barbecue sauce. Turn oven up to 475°. Grease a large baking sheet with cooking spray.  Make vegan ranch: In a medium bowl, mix together all ingredients then season with salt and pepper. Spread 1 ball pizza dough onto greased baking sheet. Spread half remaining 1/3 cup barbecue sauce on crust in a thin, even layer, leaving about a 1/2” border. Top with half the cauliflower and red onions. Repeat with remaining ingredients and bake until crust is crispy, 12 to 15 minutes.  Garnish with chives and a drizzle of vegan ranch.
