MARY BERRY'S SCONES RECIPE - BBC FOOD

Mary Berry's scones recipe - BBC Food image

Mary Berry's scones are the perfect easy tea-time treat, whether jam-and-cream-topped (in whichever order you like), plain or packed with sultanas. Equipment: You will need a fluted 5cm/2in cutter.

Provided by Mary Berry

Prep Time 30 minutes

Cook Time 30 minutes

Yield Makes 16 small scones

Number Of Ingredients 9

450g/1lb self-raising flour
2 level tsp baking powder
50g/1¾oz caster sugar
100g/3½oz butter, softened, cut into pieces
2 free-range eggs
a little milk
handful sultanas (optional)
strawberry jam
clotted cream

Steps:

  • Preheat the oven to 220C/200C Fan/Gas 7. Lightly grease two baking trays.
  • Put the flour, baking powder and sugar in a large bowl. Add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.
  • Crack the eggs into a measuring jug, then add enough milk to make the total liquid 300ml/10fl oz. Stir the egg and milk into the flour – you may not need it all – and mix to a soft, sticky dough.
  • Turn out onto a lightly floured work surface, knead lightly and work in the sultanas, if using. Roll out to a rectangle about 2cm/¾in thick.
  • Cut into as many rounds as possible with a fluted 5cm/2in cutter and place them on the prepared baking trays. Brush the tops of the scones with a little extra milk, or any egg and milk left in the jug.
  • Bake for 12–15 minutes, or until the scones are well risen and a pale, golden-brown colour. Lift onto a wire rack to cool. Eat as fresh as possible.
  • To serve, split the scones and serve with strawberry jam on the plain scones along with a good dollop of clotted cream.

EASY SCONES RECIPE - BBC FOOD

Easy scones recipe - BBC Food image

James Martin’s homemade easy scones take less than 15 minutes to bake in the oven. Just add clotted cream and fresh berries.

Provided by James Martin

Prep Time 1 hours

Cook Time 30 minutes

Yield Makes 8-10 scones

Number Of Ingredients 7

225g/8oz self-raising flour
1 tsp baking powder
pinch salt
25g/1oz caster sugar
50g/2oz unsalted butter, slightly softened
150ml/¼ pint milk
1 egg, beaten, or plain flour, for brushing or dusting

Steps:

  • Pre-heat the oven to 220C/425F/Gas 7.
  • Sift together the flour, baking powder and salt into a bowl. Stir in the sugar, add the butter and rub quickly into the flour, creating a fine breadcrumb consistency.
  • Add the milk, a little at a time, working to a smooth dough.
  • This is now best left to rest for 5-15 minutes before rolling.
  • Roll out the dough on a lightly floured work surface until 2cm/¾in thick. Using a 5cm/2in pastry cutter, cut the dough, using one sharp tap and not twisting the dough as you cut. Twisting the scone mix will result in an uneven rising.
  • Once cut, the scones can be either brushed with the beaten egg for a shiny glaze, or dusted with the flour for a matt finish.
  • Place the scones on a greased baking tray and bake in the pre-heated oven for 10-12 minutes until golden-brown. Allow to cool slightly, and serve while still warm.
