THE BEST ALL PURPOSE DEEP FRY BATTER RECIPE - FOOD.COM

The Best All Purpose Deep Fry Batter Recipe - Food.com image

We dont deep-fry a lot but when we do..we do a WHACK of stuff. I've tried numerous recipes and this by far is the cheapest, tastiest and works with everything. Fish and onion rings are phenomenol. Spices are to your own taste and can be adjusted to whatever taste you want. Believe me...I've added everything from curry to southwestern tastes, this 'basic' recipe is just a guideline to the spices and taste you are looking for. ENJOY, it's awesome.

Total Time 20 minutes

Prep Time 10 minutes

Cook Time 10 minutes

Yield 15 pieces of fish, 6 serving(s)

Number Of Ingredients 9

1 cup flour
1/2 cup cornstarch
2 teaspoons baking powder
1 (12 ounce) can beer
1 tablespoon salt
1 tablespoon pepper
2 tablespoons garlic powder
2 tablespoons Mrs. Dash table blend seasoning
1 cup extra flour (for dredging)

Steps:

  • Mix all dry ingredients, except the extra flour, whisk together.
  • Add beer and only mix lightly.
  • DO NOT over mix. If there are flour lumps just squish with the back of a spoon.
  • You want the mix to be blended but not overmixed as it will not 'puff up' when deep-frying.
  • For fish, shrimp, and 'meaty or wet' items I usually towel dry them and dredge them in the additional flour.
  • Then dip and cover in mixture. Let the excess drip off and when putting any item in the deep fryer -- use tongs.and dip whatever you are deep frying in the oil for about 10 seconds, then release.
  • This prevents the food from sticking to the bottom of the fryer. (Took us a while to learn that technique).
  • When it comes to fish or something long or big -- I just put the first inch or 2 in and let it bubble for a few seconds so that I know it won't sink to the bottom and stick. (I truly hated that with deep frying).

THE BEST DEEP FRIED FRENCH FRIES - HEART'S CONTENT FARMHO…

The Best Deep Fried French Fries - Heart's Content Farmho… image

The real way to make restaurant style French fries in your deep fryer.  A little work is all you need to turn a simple potato into something amazing.

Provided by Katie Shaw

Categories     side dishes

Total Time 160 minutes

Prep Time 30 minutes

Cook Time 10 minutes

Yield 4

Number Of Ingredients 3

3 russet potatoes (scrubbed clean)
1 quart peanut oil for frying
salt

Steps:

  • Using a sharp knife or French fry cutter, cut the potatoes into 1/4 square strips.  Place them in a bowl of ice water.  Place in the refrigerator and allow to chill for at least 2 hours, up to 12 hours.
  • Set up deep fryer according to manufacture's instructions and fill with peanut oil.  Preheat the deep fryer to 300.
  • Drain the water from the potatoes and pat them as dry as possible.  They will be very cold, maybe even frozen.   Place the potatoes in the basket.  It's okay if they are crowded for the first fry.   Submerge into the oil and deep fry for about 5-7 minutes until they are softened and slightly darker, but still pale.  Place on paper-towel lined baking sheet to drain.
  • Increase heat in deep fryer to 360.  Fry the French fries a second time, this time in smaller batches so that they float freely in the oil.  Fry for only 2-4 minutes, or until they have reached desired level of brownness and crispness.  Drain on paper-towel lined baking sheets, and salt immediately.  Serve as soon as possible

HOW TO FRY CHICKEN - BEST FRIED CHICKEN RECIPE
Once you learn how to fry chicken at home, you'll never look back! It's easier than you think—this recipe will give you golden, crispy chicken every time.

  • Thoroughly rinse the chicken pieces, then place them in a bowl and cover with 4 cups of the buttermilk. Soak in the fridge overnight or up to 24 hours. When you're ready to fry the chicken, remove the bowl from the fridge and let it sit on the counter for 30 minutes, just to take the chill off. In the meantime, preheat the oven to 360˚ and mix up the breading. Place the flour, seasoned salt, paprika, black pepper, thyme and cayenne (plus extra cayenne if you like heat) in a very large bowl. Stir together well. In a small bowl, combine the remaining 1/4 cup buttermilk and the milk. Pour the milk mixture into the flour mixture and gradually mix with a fork until there are little lumps throughout; these will adhere to the chicken and make for a crispier breading. If necessary, add a little more flour or milk to make the breading slightly lumpy. Heat 1 1/2 to 2 inches of oil in a deep skillet or Dutch oven over medium-high heat until a deep-fry thermometer reaches 365˚. Lower the heat slightly, if necessary, to keep the oil from getting hotter. Working in batches, thoroughly coat each chicken piece with breading, pressing extra breading onto the chicken if necessary. Place the breaded pieces on a plate. Add the breaded chicken to the oil, 3 or 4 pieces at a time; make sure they don't stick together. Cover the pan and fry for 5 to 7 minutes, checking occasionally to make sure the chicken isn't getting too brown. Turn the pieces over, cover again, and cook for 3 to 5 minutes more. All the while, monitor the temperature of the oil to make sure the chicken doesn't burn. Transfer the fried chicken to a baking sheet and continue frying the rest of the chicken. When all the chicken has been fried, remove the wings and legs to a rack set over a paper towel-lined baking sheet and keep covered. (These should be cooked all the way through by now, but always check if any pink juice or meat is visible. If so, return to the hot oil for another minute or so, until fully cooked.) Leave the thighs and breasts on the baking sheet. Bake the thighs and breasts for 15 minutes to finish cooking. (You can cut into the thicker part of one of the larger pieces just to make sure the chicken is cooked through. If any pink juice or meat is visible, the chicken needs to continue cooking in the oven.) Drain on the rack set over the baking sheet.
