1 (2 to 3-pound) whole chicken
1 teaspoon dried oregano
1 teaspoon garlic powder
1 tablespoon onion powder
1 teaspoon paprika
1 teaspoon ground ginger
1 teaspoon dried sage
1 teaspoon sea salt
1 tablespoon freshly ground black pepper
2 cloves garlic, smashed
1 (12-ounce) can beer
1/2 pound bacon

Steps:

  • Preheat oven to 450 degrees F. Wash chicken with cold water and pat dry with paper towels.
  • Mix dry ingredients in small bowl. Rub 1/2 of the ingredients on inside cavity of chicken. Gently peel skin away from chicken and rub mixture into meat of chicken. Open beer can pour out about 1/2 cup. Drop the garlic cloves into the beer can. Place chicken, open end down, over the beer can to insert the beer into the cavity. Place chicken, standing up, in large saute pan. Place 1/3 of the bacon in the top cavity of the chicken and drape the remaining 2/3 of the bacon down the outside of the chicken. Pierce the bacon to the chicken with toothpicks.
  • Place chicken in the oven for 10 minutes and then lower temperature to 325 degrees F and cook for another 1 hour, or until the internal temperature in the thickest part of the thigh reaches 165 degrees F on an instant-read thermometer.

This recipe was adapted from many that call for the chicken to be cooked on a grill. This one is done in the oven. It turns out moist and tender. Very easy to do.

Number Of Ingredients 10

1 chicken
1 tablespoon sweet basil
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon granulated garlic
1 tablespoon seasoning salt
1/2 teaspoon pepper
1 1/2 tablespoons poultry seasoning
3 tablespoons mayonnaise
1 beer

Steps:

  • Pre heat oven to 375.
  • Wash and clean chicken inside and out.
  • Place all dry ingredients on a paper plate or in a bowl. Mix all together.
  • Rub dry 2/3's of the ingredients on the inside of the bird and 1/2 of the remaining on the outside.
  • Open beer and drink half or set asside. Put the rest of the dry seasoning in the half a can of beer.
  • Place the can right side up into the bird's butt.
  • Stand the bird in a baking pan.
  • Slather the bird's outside with the mayonaise.
  • Place the chicken in the pre heated oven and bake for 2 hours. Reduce heat to 325 for 1/2 hour.
  • Remove when nice and brown.
  • Let stand for 15 minutes before carving.
  • Use pan drippings to make gravy.

    2. Preheat the oven to 200ºC/400ºF/gas 6. Remove the chicken from the fridge and leave aside to come up to room temperature. Bash the rub ingredients to a fine powder in a large pestle and mortar, then drizzle the chicken with olive oil. Sprinkle over the rub and use your hands to massage all those lovely flavours into all the nooks and crannies.
    3. Crack open the beer and pour out around two-thirds of it (or drink it!), then carefully lower the chicken cavity onto the can so it looks like it’s sitting up. Position the chicken so it’s upright on a roasting tray, then place in the oven and cook for around 1 hour 10 minutes, or until golden and cooked through. To check it’s done, insert a knife into the thickest part of the thigh – the juices should run clear.
    4. Brush the chicken all over with the barbecue sauce, then return to the oven for a further 10 minutes, or until dark and sticky. Meanwhile, finely slice the chilli and spring onions and pick the coriander leaves. Once ready, carefully remove and discard the can, then carve up the bird, scatter over the chilli, spring onions and coriander leaves, then serve.
