Here is a family favorite recipe that while it sounds strange is very tasty and has won over everyone who has tried it. It was born out of wartime in the Philippines we believe. Typically served for breakfast with butter or margarine. Not a sweet waffle. Best in a standard waffle iron (not Belgian).

Number Of Ingredients 7

2 eggs
1?¼ cups milk
2 teaspoons cooking oil
1?½ cups all-purpose flour
1 pinch salt
2 teaspoons baking powder
½ (12 ounce) can corned beef, broken into pieces

Steps:

  • Preheat waffle iron.
  • In a medium bowl, mix together the eggs, milk and oil. Combine the flour, salt and baking powder; stir into the milk mixture until it makes a smooth batter. Stir in corned beef.
  • Spoon batter onto your waffle iron, close the lid, and cook until the waffle iron stops steaming and waffles are golden. Serve hot with butter.

1 recipe Basic Country Beef Breakfast Sausage
2 cups all-purpose baking mix
1 large egg
1-1/3 cups reduced-fat or skim milk
2 tablespoon vegetable oil
1/2 cup shredded Cheddar cheese
Maple syrup, hot sauce, sour cream

Steps:

  • Prepare Basic Country Beef Breakfast Sausage.  Set aside.  Whisk together baking mix, egg, milk and vegetable oil in large bowl until smooth. Stir in cheese and sausage. Country-Style Beef Breakfast Sausage: Combine 1 pound Ground Beef (93% or leaner), 2 teaspoons chopped fresh sage or 1/2 teaspoon rubbed sage, 1 teaspoon garlic power, 1 teaspoon onion power, 1/2 teaspoon salt and 1/4 to 1/2 teaspoon crushed red pepper in large bowl, mixing lightly but thoroughly.  Heat large nonstick skillet over medium heat until hot.  Add sausage mixture; cook 8 to 10 minutes, breaking into 1/2-inch crumbles, stirring occasionally.
  • Preheat waffle iron according to manufacturer’s directions.  Place 1/2 cup waffle batter in waffle iron for each waffle and cook for 4 to 6 minutes or until waffles are golden brown.  Top with toppings, if desired.

I've had this recipe for years given to me by my mother. I have to at least triple this when I make it. The recipe says 4 servings, but we like a lot on our toast. We love it for breakfast with fried eggs. Yummy! I also add ground black pepper to mine, but that's just how I like it. Cook and prep times are approximate.
