Hot and fast is the secret to cooking squid successfully, so it remains tender and juicy. Barbecuing the lemons before juicing them adds a roasted sweetness to the cheat’s aioli that serves as dip.

raw cleaned squid tubes, defrosted if frozen

3 tbsp.

sweet chilli jam

1

garlic clove, finely chopped

Juice 1/2 lime

2 tbsp.

finely chopped coriander or parsley

1

lemon, quartered

6 tbsp.

mayonnaise

garlic cloves, crushed

Steps:

  •  First, prepare the squid. Use a thin knife to scrape out any loose membrane from the inside of the squid tube, being careful not to cut through the sides. Pat squid dry with kitchen paper and place in a large bowl.  In a small bowl mix the chilli jam, garlic, lime juice and some seasoning. Add half the chilli mix to the squid along with the oil; toss to coat. Stir coriander into reserved chilli mix. Barbecue the lemon wedges for 2min on each side until charred. Squeeze juice into a bowl and mix with the mayonnaise, garlic and some seasoning. Barbecue the squid, or cook in a large griddle pan, over very high heat for 2min per side, until lightly charred. Brush with the remaining chilli jam, cook for 30sec more then remove to a plate and serve with the lemon aioli.

2 lemons (juiced)
0.333 cup butter
3 tablespoons chopped parsley

Steps:

  • Mix the squid with the lemon juice in a bowl, ensuring the squid is thoroughly coated. Set aside to marinate for 30 minutes.
  • Heat the barbecue or a grill (broiler) to its highest setting and cook the squid, reserving its marinade, for about 3 minutes on each side.
  • Meanwhile, melt the butter in a wide pan and add the squid marinade and parsley. Bring to a simmer and season with salt and pepper. Pour the sauce over the squid and serve immediately.

    1. Turn the first squid upside down so that its wings are flat on your chopping board.
    2. Push in a large knife and leave it inside flat on its side. With a sharp knife, slice the squid as if you were going to chop it into rings. The knife that is lying inside the body of the squid will prevent you from cutting right through it. You end up with a concertina effect with the squid sliced, but still holding together. Repeat with the other three.
    3. In a pestle and mortar, bash the fennel seeds into a light powder with a good pinch of salt and pepper. Sprinkle this all over the squid, making sure it gets into all the cuts you’ve made.
    4. Place immediately on the hottest part of the grill, and grill, turning every 30 seconds or so or every time it starts to char, until the squid firm up and turn from opaque to white inside. This shouldn’t take more than a few minutes.
    5. Add the lemon juice to a bowl with 3 times as much extra virgin olive oil and whisk together. Stir in the lemon zest, chilli, mint and a pinch of salt and pepper.
    6. Drizzle this over the squid, then serve with lemon wedges on the side for squeezing over.
