One of my favorite recipes from 1,001 Vegetarian Recipes. Also one of the first recipes I tried to cook when I first became a vegetarian. Sounds funny, tastes great! Even my carnivorous roommate from college loved this one.

Cook Time 30 minutes

Yield 4-6 serving(s)

Number Of Ingredients 8

1 tablespoon vegetable oil
1 small white onion, diced
1 small green bell pepper, diced
1 1/4 cups water
1/2 cup white rice
1 cup frozen corn kernels, thawed
1 cup black beans
1/2 cup barbecue sauce

Steps:

  • Heat oil over medium heat
  • Add onions and bell peppers and cook until softened.
  • Stir in the water and bring it to a boil.
  • Stir in the rice and return to boil.
  • Cover and simmer for 20 minutes or until rice is tender.
  • Stir in the corn beans and BBQ sauce and heat through.
  • Enjoy!

Rum has always been a major part of the Caribbean's history and personality, but these beans are also good without it.

Number Of Ingredients 13

5 ounces chorizo
1 cup diced onion
4 garlic cloves, finely chopped
2 jalapeño peppers, seeded and chopped
½ cup ketchup
½ cup molasses
½ cup dark rum
¼ cup prepared mustard
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon hot sauce
½ teaspoon ground ginger
3 (15-ounce) cans black beans, drained

Steps:

  • Cook chorizo in a large saucepan over medium heat until browned, stirring to crumble; drain and set aside. Add onion, garlic, and jalapeños to pan; cook 5 minutes or until onion is tender. Stir in ketchup and remaining ingredients except beans; bring to a boil. Reduce heat, and simmer 5 minutes, stirring occasionally. Stir in the chorizo and beans; simmer for 1 hour over low heat, stirring occasionally.
