The perfect outdoor snack to make with kids. Next time you have a barbecue or go camping, find some long sticks and make damper bread to cook over the campfire.

500g self-raising flour
80g golden caster sugar
Strawberry jam or chocolate spread, to serve

Steps:

  • Find 8 long sticks (about 50cm) and cover half of each one with foil. Put the flour into a big bowl. Add the sugar and mix. Pour 200ml water onto the flour and mix to a dough. Knead lightly in the bowl until the dough comes together, then set aside for 10 minutes.
  • Divide the mixture in half, then break each half into 4 equal pieces so that you have 8 pieces of dough.
  • Take 1 lump of dough and roll it between your hands to make a sausage shape. Wrap the dough around the foil-covered end of the stick and gently press it onto the stick so that it won’t fall off.
  • Cook the dampers over a campfire or barbecue for 10-12 minutes – keep turning them so they turn golden brown all over.
  • Carefully tap the dough with your finger – when it’s cooked, it should feel solid when you tap it. Wrap some kitchen paper or a napkin around the damper and pull off the stick.
  • Fill the middle of each damper with either jam or chocolate spread.

Damper Bread was a staple of the early Australian settlers' diet. Traditionally, the dough was cooked directly on the coals of an open fire. If you use this method, have a beer handy in case some of the ashes on the damper are still glowing when you eat it!

4 cups self-rising flour
1 teaspoon salt
1 tablespoon butter, softened
1 cup milk
½ cup water

Steps:

  • Preheat oven to 425 degrees F (220 degrees C) Grease a baking sheet.
  • In a large bowl, stir together the flour and the salt. With pastry blender or your hands, cut in butter. Make a well in the center of the flour mixture and pour in the milk and water. Stir until the dough comes together. Turn the dough out onto a lightly floured surface and form into a round loaf 8 inches across. Place the loaf onto the prepared pan and using a sharp knife, cut a cross in the top.
  • Bake for 25 minutes in the preheated oven, then lower the temperature to 350 degrees F (175 degrees C) and continue to bake for an additional 5 to 10 minutes. The loaf should be golden brown and the bottom should sound hollow when tapped.
