I was in a Christmas baking frenzy, trying to decide what to make next. My roommate suggested something with bananas and walnuts, so I created this recipe. Rolling the dough in brown sugar adds a nice caramel touch. —Elizabeth Smith, Arnold, Pennsylvania

1/2 cup butter, softened
4 ounces cream cheese, softened
1 cup packed brown sugar
1/2 cup sugar
2 large eggs, room temperature
1 cup mashed ripe bananas (about 2 medium)
1 tablespoon rum
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups old-fashioned oats
1 cup chopped walnuts
1/2 cup packed brown sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, cream cheese and sugars until blended. Beat in eggs, bananas, rum and vanilla. In another bowl, whisk flour, cinnamon, baking powder, salt and baking soda; gradually beat into creamed mixture. Stir in oats and walnuts., Shape rounded teaspoons of dough into balls; roll in additional brown sugar. Place 1 in. apart on ungreased baking sheets. Bake until edges begin to brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in airtight containers.

¼ cup butter
? cup dark brown sugar
3?½ tablespoons rum
1?½ teaspoons vanilla extract
½ teaspoon ground cinnamon
3 bananas, peeled and sliced lengthwise and crosswise
¼ cup coarsely chopped walnuts
1 pint vanilla ice cream

Steps:

  • In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream.

Stir in the salt and set off to the side to cool to room temperature.To make the frosting, cream together the cream cheese and butter until light and fluffy, about 5 minutes. Stir in the powdered sugar and vanilla and beat on high until fluffy. Transfer half of the frosting onto the cooled bars and spread out into an even layer. Transfer the remaining frosting to a piping bag and pipe out a border along the edges of the cookie bars, this will keep the bananas from leaking over the edge. Pour the cooled bananas and caramel in the center and spread out. Chill for 30 minutes to set before cutting into bars and serving.
